Making your own chicken noodle soup is so simple these days, I'm amazed people still eat canned.

store bought Rotisserie Chicken

Store bought chix broth

chopped parsley

carrots

onions

celery

egg noodles (or rice, or small pasta)

boil the broth, carrots onions and celery til tender. Add some chopped parsley and rotisserie chicken broken up

cook the egg noodles on the side and pour the broth over it.

Top with grated parm cheese

Takes about 20 minutes. Tons of left overs. Always a favorite

It's actually not that far from Costco's own Chix noodle soup, which is pretty good too. Might be a fall/winter/spring only item. Keep a lookout for it.

It's actually not that far from Costco's own Chix noodle soup, which is pretty good too. Might be a fall/winter/spring only item. Keep a lookout for it.
Just bought some the other day. Not much in the way of noodles. I like plenty o' noodles. Decently flavored broth, though.

I hate Costco rotisserie chicken, though. It's generally fatty and slimy. It also stinks to high heaven unless you eat the whole thing that day.

Angrywife does this in a big pot and then freezes a bunch of individual servings that we keep in the deep freeze. Big fan of this approach.

Odd... I find the exactly opposite to be true here in Memphis. The Kroger chickens are tiny and fatty, and the Costco Chickens are much larger, cheaper, and loaded with quality meat. Moist but definitely not slimy or fatty.

Yup, Costco's chickens are awesome and such a great price. For years, shareholders have been trying to get them to raise the price, but they haven't. Love me some Costco.

Wife and I do this, but we save all the chicken bones in the freezer for a few months from when I cook chicken on the grill. There's usually enough meat left on those suckers, and you get all the spices and smoke flavor in the soup.

Freaking awesome.

Perhaps it is our particular CostCo. Have you ever tried re-heating their dark meat vs. reheating a baked, organic Costco chicken from the oven? Not even close.

Slimy, disgusting, fatty...

Yep. Another reason to make your own soup if you can get the Low Sodium versions of the broth.

You can go one step further and make your own stock as well and REALLY control the amount of salt used. I do this often. Freezes VERY well.

It's a shame, because soup is AWESOME.

There's a dive restaraunt in Webster, MA that I used to eat at often that made the best ever which got me hooked on it. If you're ever in the area, it's called the Golden Greek. Across the street from the worlds best strip club too :thumbup:

Golden Greek is now bookmarked in Yelp and Geofencing on the phone.. next time I'm within 25 miles of Webster my phone will be yelling at me to stop in :lol:
