How would you rank the following guys?

Just as you have them listed here, with Woodley as high as third if you're willing to accept a fair amount of downside.

Reasonable projections for each:
Ruud 98 solos, 1 sack >> 106 pts
Pierce 92 solos, 2 sacks >> 108 pts
Timmons 55 solos, 4 sacks >> 87 pts
Woodley 50 solos, 8 sacks >> 114 pts
Wimbley 45 solos, 6 sacks >> 81 pts

Lot of volatility in the high upside, questionable tackling OLBs. Huge boost to your lineup when they hit, but killers when they don't. If Woodley hits that projection, he's the best of the bunch. If he puts up a 45-4 season, he's a mess. The better risk may be a guy like Timmons, who could potentially be a 70 solo, 6-7 sack kind of guy. Woodley is definitely tempting, though.

Jene, thanks for the reply. In case you're wondering when my spot came up all the guys above save for Ruud were available and I went with Timmons. Its a keep 1 IDP league, so that was part of it and my gut told me to take him over Woodley. Again, thanks for the response.

I probably would have taken a chance on Woodley, but Timmons is a good choice too.

When there is a tough choice, going with your gut is usually a good choice.
