MEMPHIS BBQFest > 2023 > 1 Month Away - $100,000 budget due to inflation! (1 Viewer)

Keep us updated...I can't wait to see the late night twitter pics!
Will do my best!

Will try to capture a cross section of various things (food prep/service... late night parties/ladies... impressive booth setups....etc) to give everyone as good a feel of the festival as you can get without actually going.
As long as it spares us from videos of Bree Olsen's cat (her actual cat, not inuendo).
Speaking of cat's and pron stars... word from my buddy on the team next door (the one with the stripper poles) is that some dude on his team is tight with some porn star that lives locally and every year she shows up with her stripper friends and end up on the poles / bar for a bit. Yeah, i'll likely drop in for that...
This thread just got a bit more interesting.....

Prep for 20 gallons of Jambalaya finished....packing up the cooler and car and rolling out at 5 am...

Gus' Fried Chicken in less than 24 hours.... :tebow:

Stoked to see ya again buddy! We can work on getting your stuff loaded in when you get here... however the LOAD IN PERIOD ends at 3PM tomorrow. So if you try to bring anything in past that point it will have to be lugged in our cart from up the hill near beale. That will be a PITA I imagine. I'll text/call you but it'd be a good idea to get down to the park ASAP to offload your ride before getting chicken so we don't have to lug that heavy ### cast iron pot and all the fixins down to the river ourselves later.

TWITTER : FOLLOW MY SLAB YO MAMA UPDATES @MSAVARD

I will less frequently post updates to this thread as well. Goal will be to update quite a lot with images I find interesting.... assuming I have data coverage.

Forgive me if I "go dark" for a bit.. cell coverage can be spotty due to crowds and my attention span can go spotty due to booze.
Nice, following you on twitter.

Pallet of Lagunitas IPA : happy to be the first bar/venue/anything to introduce this delicious beer to the Memphis market  :banned:
I fail to believe this is possible. It's in pretty wide release nationwide and has been for many years.
You can fail all you want but it is not available in Memphis. They had to send in a special truck from nashville with it yesterday. They will be launching in memphis soon (I'm actually working with them to get it in a few buddies bars) but this is a pre-release teaser tasting for the market.

Sorry guys lots of pics on twitter @msavard or on Facebook.com/slabyomamabbq (I think that's it).

I've not been able to sleep due to damn red bull. Gotta be at the river in an hour to prep for judging day. Some notes:

Wings that tipsy and Courtney made were un ####### believable. Best I've ever had and I'm a Wing snob. The sentiment was shared among many in the booth. Two judges happened thru who had judged wings and said it was much better than anything on thier table.

Tusken raider came by again... Great dude. Tried to break away for a bit to say hey down at his booth but it just got too crazy.

We packed it in again.

The mayor of Coronado, CA was partying with us all weekend. I threw him a shout out on FB and my twitter feed and the official city of Coronado twitter account retweeted it, F bomb and all which I found amusing.

All the ESPN radio crew locally and Grizz announcers were hanging at our booth and when they were going on about certain teams to hit one referred to our booth as a must hit and "you can't miss it, it's like a small village" or some ####

Not sure on rankings. Ill know later today.

We sold out of everything. 60 handles of vodka gone. Out of our 22 kegs I think we have 1.5 left.

I've eaten a lot of BBQ.

Had a team member get in my face over some stupid #### and kept chest bumping and whatnot. Threw him down some stairs and popped him on the nose before it got broken up. He started yelling about him being "3 stars boxer" and "this isnt over". Whatever. My first "fight" in like a decade. So stupid. We're good tho now.

Lot of chatter about what's up next year. Cat is out of the bag on me moving on. Love this team but its time to do something a little different I think.

Tipsy as always killed it. Great food and just an awesome guy to hang with. Across the board tons of people (team and guests) were so happy he made the trip up again. I know I am. Right now he's manning our pit for game day. I hope he's got something tasty in there ;)

Lagunitas guys are awesome. Been invited to thier skunk train corporate outing in sept. involves a KOA in NorCal with kegs of everything they make everywhere and bottomless cups, BBQ, and weed. Then something about a train up into the mountains thru redwoods w open box cars with bars, bands, etc. night disc golf w glow in the dark frisbees on some ridiculous course. I dunno specifics other than sounds kinda fun.

Okay time to get ready for judging day.

Great seeing you guys again, wish I could've stayed longer. How did you guys place?

Got to chat with Tipsy for a bit during a break, & am looking forward to hitting up McClure's next time I'm in NOLA.

The turn in wings were amazing. The second batch lit me up, & Tipsy smirked & told me that batch o' sauce was straight up Frank's & butter. The Lagunitas definitely helped soften the sizzle.

Thanks again for the hospitality, I'm already looking forward to next year.

Good to see ya as always Patrick! Sorry I never made it down to you guys spot! Shot got crazy not long after ya left.

Man I am feeling rough, bout to head to the park to load out...not fun!

Thanks again Icon. What a killer time...although I don't think anyone made the nookie in the port o lets this year...but I could be wrong.

So wiped out.

you all win anything??
:no:First year with no hardware in team history... terrible finishes on food. Had some issues with the Backwoods pit among there being rumors of a horribly mismanaged judges tent (whole festival is under new management). For comparison sake, a buddy's team who have finished 7th and 5th in ribs the last two years dropped to 78th or something of the sort. Not making excuses... our ribs ran early... but our wings were the best I've ever had. Phenomenal flavor. Folks were buzzing. Finished below mid-point in rankings. So strange.

Party went quite well though :banned:

I wouldn't even both entering a wing contest. Wings that score a 10 with one judge could score a 2 with another based solely on the heat. Your phenomenal favor is likely too mild for some and over the top hot for others.

We've had a top 3 finish in wings in the past but i agree its very subjective (heat). One of the complaints on our ribs was the heat. Me, I love heat. If you can't handle / don't like heat you shouldn't be judging wings. Heard that the wife of one of my team members was given 2 passes to judge wings. She's not certified judge and has no experience / training on judging criteria. I'm guessing they were short on judges this year and simply offered a lot of passes to the public. Unacceptable for an event of this caliber IMO.I am a certified MBN judge with, what I believe to be a pretty good pallate, but even I would hesitate to judge BBQfest without doing a few more smaller events first.

2014 EVENT POSTINGS START HERE

What's up!?

Hotel prices are dipping early this year for the best place (The Westin).

We just booked Wed/Thurs/Fri nights for $130/night on Hotwire (The 4 Star Hotel in Downtown Memphis on Hotwire is the Westin). It's not necessary to book now, but IF You're 100% coming this year and want to stay at a very nice hotel with a great location, this rate is only going to go up.

Applications are due in the next month so we are in the process of forming our team. We need to get our entry in ASAP as a "new" team this year.

Any FBG's looking for sponsorship or assistant team membership information shoot me a PM.

SOOOOO... turns out my buddy slacked on booking the rooms, so instead of paying $130/ngiht for the awesome Westin right off beale... we paid $150/night for the "4 Star" Sheraton about 1/2-3/4mi north of beale near the interstate.... <_<

So WARNING... If you're booking through hotwire right now the 4 star downtown hotel is Sheraton, not Westin. Not a bad hotel at all... but no way NEAR as good a location as the Westin.

ABOUT THE FESTIVAL:
• Annually there are literally hundreds of teams that get turned down. It's much harder for "new" teams like ours to get in, than established teams. One of our team members is the head of the local scaffold company that builds all the team's scaffolds at musicfest, plus the scaffold for the Music festival 2 weeks before. he's got a VERY good relationship with the director of operations. Bottom line... we should have no trouble getting our "entry" moved to the top of the pile.

• In an effort to help Tipsy out in the pit (so he can enjoy hisself) we're talking with the Executive Chef for the BB Kings franchise. He's based out of the Memphis location but oversees the menu franchise wide, and is in charge of opening/training for new locations. He's a good buddy of mine (pic of a whole hog roast setup we made at his house for my birthday this year) and is very interested. He's aware this is 100% Tipsy's show and he's here to help.... but I think Tipsy would appreciate having a second set hands with a lot of pit time.

• First meeting is this Thursday night to start hammering out details... Entry forms due later this month.

SO who's coming down this year? :porked: :porked:

Count me in! I can't remember why I didn't make the 20min drive this past year but I will be there this time...

My bro and I are 80% (need to clear with the wives and works schedules)...I just booked the rooms at the Sheraton today. We are going to come out Thursday and leave Sunday. We are both amatuer at best BBQ guys but would love to pitch in a hand if needed....also, would not mind sponsering something if needed as well.

hmmmm, maybe this can be the year I get up there. Let me get with the better half and if I can get up I will be more than happy to "poke the pits" whenever needed.

Excellent

Tipsy is pitmaster and will be in charge of dictating when and what he's needing help with... however the crunch times in the pit are Friday morning/afternoon when we're prepping all ancillary entries (beef, seafood, sauces, etc). Then "Showtime" starts around 6am Sat AM and runs through 3pm or so.. that's the primary judging day with turn in boxes and onsite judging. This is aka SERIOUS BUSINESS time. :)

At the very least you'll be forced to drink beer, eat world-class BBQ, and sit on the banks of the mighty mississippi river watching it roll by for a couple days. :banned: :D

You know you've got a standing invite GB.

Looks like we SHOULD be good to skip to the front of the long line of applicants for the scarce "new team" openings. A team member runs the scaffold company that does all the stages for BBQfest, Music Festival, etc. and is tight with the Director of Operations. He's put in a word with the woman who handles applications... and told the other guy to email her. He called me and asked me to craft the email:

######,

I was given your contact info from ###### regarding our upcoming application for MIM BBQfest. I have worked with ###### and the rest of your staff over the last couple years as the primary scaffold supplier for all MIM events including BBQfest and the BSMF.

This past year there was a group of 6 core members of Slab Yo Mama BBQ , a 10 year festival mainstay with multiple top 10 finishes, who decided to branch out and form a new team. The split was due to a desire to head in a different direction, including a wish to work with a new pitmaster out of New Orleans, Neil McClure (proprietor of McClure's Barbecue on Magazine Street).

A mainstay in the NOLA restaurant scene, Neil's new restaurant has already been featured in various regional print/online media outlets and has just this week been contacted about being featured on Cooking Channel's "Best In Chow" as well as Adam Richman's new show "Hidden Gems" on Travel Channel. After 2 years as an assistant pitmaster with Slab Yo Mama, we are excited to see what he can do with full creative control.

Given my ongoing relationship with Memphis In May, coupled with our desire to bring one of the region's rising BBQ Stars into the fray, I was hoping you'd be able to assist our team, McClure's Barbecue, in securing a space at the 2014 World Championship of BBQ.

Thank you for your time, and if you have any questions please feel free to contact me via email or my cell below.
Perhaps a little heavy handed, but it worked. My buddy got a call 5 mins later letting him know we didn't need to send in an application, that we'd be receiving a "returning team invite packet" in the mail. BOOM... networking. One step closer to making our McClures Barbecue booth at "The Superbowl of Swine" a reality.

First official team meeting tonight to hammer out some details. Host is smoking up some chicken as i type. Gotta grab some beers on the way over.... can't talk BBQ without beer. :banned:

What if you have zero experience but are an absolute soldier, and a great time when drunk?

Plus I have zero obligations... outside of work, but that's just work.

Standing invite for a reasonable number of FBG attendees to come hang... no need to work. MOST folks just come to party. :banned:

The pit space is usually pretty confined and any more than 2-3 guys back there working can result in doing more harm then good. That's all tipsy's call on who and how many folks he wants back there but generally speaking guests can leave the "work" to the team and focus on enjoying the festivities :)
