My grandmother made squirrel dumplings on occasion. I remember liking them, but don't really recall what it tasted like though.

That usually happens when that beaver has had a steady diet of nuts.

The squirrel dumplings with fur might have made me biased, but I didn't really care for it. Like low grade rabbit.

it actually does taste very similar to chicken. It is pretty much white meat. When I had it, we cooked it with wing sauce.

:goodposting: The two are much alike in flavor and texture. Not bad as a break from ordinary fare but not something you'd want often.

Squirrel Dumplings

~ 3 squirrels, cut up (All hair and shot removed.)

~ 1 egg

~ 2 cups plain flour

~ 3/4 cup broth

~ 1 teaspoon salt

~ salt and pepper

Boil squirrels in four quarts of water until tender. Remove squirrels from broth, let cool, then remove meat from bones. Set aside.

In large bowl, mix flour, egg and one teaspoon of salt with 3/4 cup of broth and roll into ball.

Strain the broth to remove any stray shot then resume boil. Return meat to boiling broth.

On a floured cutting board, use rolling pin to roll the dough ball to a thickness of 1/16 inch. Cut into 1-inch wide strips and drop strips one at a time into the boiling broth. Gently shake pot after last dumpling is added to prevent sticking.

Cook approximately 10-15 minutes until dumplings are tender. Salt and pepper to taste.

Serve and Enjoy!

Squirrel is nasty. Only eat if starving.

Back in college, a friend brought squirrel gravy and biscuits for me and my roommate. She was from West Virginia and my buddy bit down on a piece of buck shot.

I like rabbit better. Squirrel is very lean, so it's easy to overcook and make it tough. Medium rare squirrel just looks too much like roadkill for most people to stomach, and if it hasn't been head-shot, it's pretty disgusting anyway.

My uncle used to shoot squirrels in his backyard and put them in tomato sauce for spaghetti. I ate squirrel a number of times just thinking it was some kind of beef in the sauce..one day I bit into a piece of meat and there were BBs in it. Then I know this did not come from the store. It looks and tastes a little like a chicken thigh with a stronger flavor.

It was right after eating squirrel for the first time that I started craving all kinds of nuts.
