Which actors or directors make a movie mandatory watching for you?

Off the top of my head:

Actors:
Eastwood
Sean Penn
Scarlett Johannson
Casey Affleck
Bryan Cranston
 
Directors:
Coen brothers
Eastwood
Ben Affleck
Tarantino
 
Ben Affleck may be a surprise but his handful of movies have all been strong. Like the others on the list he has an unmistakeable style of moviemaking. He may not be in the same league as the others if only for the small body of work, but you have to take notice when someone is batting 1.000. He has a rare gift of making a movie really intense and compelling.
 
On another note, looks like Adam Driver is going to be huge. He's got two movies out that look great, called Silence and Paterson. Would never have predicted his career trajectory from his role on Girls. His performance was arguably the best thing about The Force Awakens. He's our next big movie star and deservedly so.

Nicholson is one I could add to my list too (anything recent though?).

I like DeNiro a lot too but he's been in a ####load of bad movies.

Huge fan of Buscemi too.

 
Innaritu, Jonze, Weir & Almodovar are my only automatics. I'll pay attention when i hear the names Taymor, Fincher, Zemeckis, Abrams, Del Toro, Bigelow, Soderberg, Scorsese, Spielberg, Coppola (both), Lee (both), Anderson (both), Coen, Burton, & Gilliam. And Rob Marshall, but only cuz he's family & i have to.

No actors are automatic, but Streep, DDL, Cucumberbatch, Hardy, Depp and 1st nude scenes make me sit up at least.

Coen Bros, QT, Nolan.  That's it

Like a lot of actors but none are must see.  Pacino, Denzel and Waltz are close.  Scorsese and De Palma are close too on the director list.

More times than not, I focus on the directors a bit more than actors. 
 

My list of directors off the top of my head that I will currently see whatever they do without any info about the movie:

PTA, Lynch,  Fincher, Steve McQueen, Inarritu, Whedon, Spize Jonze, Ang Lee, Jeff Nichols, Chan-wook Park, Aronofsky, Bong Joon-ho

Here are some I still really like, but have fallen out of love a little bit with and would need to see more info:

Coen Brothers (only like their dramas), Malick (haven't loved the last couple),  Nolan (haven't loved the last couple), M.Haneke, Nicolas Winding Refn, Cronenberg,

I am sure I am missing a few, these were just on the fly.

What would you recommend to watch first from Chan-wook Park or Bong Joon-ho? I've seen Oldboy (Park) and Snowpiercer & The Host (Joon-ho).

As far as Park goes, I have liked all of his foreign movies that I have seen.  If you liked Oldboy, I would check out the other 2 movies in the vengeance "trilogy" - Sympathy for Mr. Vengeance and Lady Vengeance.  I also liked the odd take on a familiar horror idea in Thirst, but have had mixed reviews on that one.  People seem pretty high on The Handmaiden in the recently viewed thread but I need to catch up with that one (hopefully this week). 

For Bong, I think Mother might be my favorite of his but it's close.  I also remember really liking Memories of Murder, but it's been awhile and for some reason can't remember much about it. 

Of the movies I listed I would probably rank them:

Thirst

It's a trilogy in the loosest sense.  More of a trilogy in spirit and theme.  Could be wrong (again, it's been a bit), but don't remember any connecting characters.  There are actors in multiple movies, but I believe they play different characters.

I was disappointed when Birdman turned out not to be a cheesy superhero movie, but Michael Keaton.  There are many actors that I absolutely adore but no one comes close to my dream team dude!

Director: Wes Anderson. 

Actor: Daniel Day Lewis.  

Huge fan of others obviously but not to the extent that I must see their work.

I think I remember reading that he has dementia.

 
Far prefer Matt Damon to Affleck.

I'd say Tom Hanks used to be that must-see actor as he never seemed to choose a bad movie.  

Oh, and Steven Seagal.

Can't think of any really terrible movies Denzel or DiCaprio have made, and they've been in a ton of awesome ones. I'll watch anything they're in. There are a bunch of actors who may not be can't miss, but if I hear they're in something I'll definitely give it a look (Clooney, Pitt, Hanks, Spacey, Damon come to mind as far as A-listers).

 
A lot of my favorites have already been named, but I would add Joseph Gordon-Levitt and he doesn't have a big body of work, but Ricky Gervais too.

 
This is really the right answer.  Everyone listed in this thread has made some great work.  They get on great runs and their body of work gives them the benefit of the doubt.  But it comes down to executing on a great story.   Some take their time and pick their spots, and don't make as many bad choices.  Some take risks that don't pan out, or sell out and take the money because their quote was so high at the time.  If the story doesn't grab me nobody is must see.
I'd think having a great agent with a good eye would help too.
