I need a RB1. I'm thinking about bidding Alshon Jeffery. Which minimum bid should I set? Jay Ajayi?

I'd be surprised if you could get Ajayi for Jeffery. Jeffery is an unreliable WR2.

I'd think more along the lines of a Lamar Miller type.

Unless you can get a big upgrade in RB, trading away Jeffrey will really damage your WR depth.  I am not sure I would be looking to trade him based on your roster.
