But if that kind of hit can't be done, what's a defender supposed to do? LET the WR catch the ball and then hope he drops it?

I guess that's the point. If the WR has to jump a little to catch the pass and the LB is running towards him, he's going to HAVE to get up a little bit to make solid contact. In this case, Keuchley definitely led with his shoulder and arm, but also had to reach up a little to hit Matthews in the chest. FWIW...didn't think last week's non-call was all that egregious as I don't think Gronk had any hope of catching that ball
If the WR is up in the air, with his head UP (as opposed to ducking down), then there is ZERO excuse to still make H2H contact. The DB had PLENTY of target area to hit there.I guess that's the point.
