However, I quess it depends on how you define a successful season. Would a 10-6 season by Herm Edwards and the Chiefs be more successful than an 8-8 season by Gary Kubiak and the Texans or Sean Payton and the Saints?

While a 10-6 team is definately more successful than an 8-8 team, raising a team from the bottom of the conference to a .500 team would be considered a very successful year for a first year head coach.
