What are some good gift suggestions for people who already have everything?

No alcohol - that’s too easy, been done.
No charity donations in their name (unless you have a super unique idea), as they already do so much of this.

Jelly of the month club.
Funny enough, I'm a heavy P,B&J consumer. I joked with one of my suppliers at a dinner once about the jelly I use (just off the shelf grape) and got lambasted for it. For Christmas, he got me enrolled in a jelly of the month club and it was surprisingly excellent. It also became our running joke for years.

Now, the recipient has to be into P,B&J or else they are just going to have a pile of jelly they won't ever use and probably hate you for it so do some leg work if you go this route.
 
I usually take my dad out to dinner for his bday. While he’s “someone who has everything”, he no longer has his wife so at Christmas I give him some chocolate covered cherries my mom used to give him every year. He seems to appreciate that. It’s like when Walter White gave Elliott Schwartz ramen noodles.
 
Give them the one thing they have never had: your complete and total submission to any of their earthly desires.
 
How much are you willing to spend?

Lessons for something they already enjoy, or an “extreme” experience, like sky diving, race car driving, rock climbing, etc. Partake in whatever you choose with them, as presumably they find your company valuable.
 
it's somewhat hard to give suggestions when we don't know who or what it's for but I don't want to pry. Handmade gifts are pretty sentimental so that's always a good idea.

A gift card so they can buy what they want would work. A gift card to some fancy restaurant is nice.
 
Serious answer:

Food and experiences. Depending on what they like. But as someone who pretty much owns everything I want, the best gifts I have received these days (excluding alcohol which you said to in OP) are:

  • Cooking classes
  • Wine and cheese class
  • Tickets to fave sports teams (maybe it's already in here from like 10 years ago but my wife got us Mavs tickets once when we were in the Bay...against Sacramento because they were "local" LOL. Was a fun all day/night trip)
  • Monthly hot sauce
  • Monthly beef jerky
  • (For wife) Monthly flowers
  • Corvette street racing experience (at TX Motor Speedway)
  • Childcare
  • Doordash and Uber eats cards never go unused
  • Massage (at a professional place, not from the gift giver)
 
If they are high net worth people where security and privacy are meaningful to them—perhaps a nice quality Faraday bag/sleeve bundles for their laptops/keys/tablets..etc. The company Go Dark apparently makes some nice ones.
