I also added water along the way and you'll get a feel for it as you cook. You do want to keep everything well hydrated and the rice will soak up a lot of the liquid, but I just didn't want to over water it.- To the dry spices, I included paprika and a healthy dose of cumin because I just think they work very well with beans. - Instead of just throwing the chopped veggies in fresh, I sauteed them in a little olive oil and of course, added a nice dose of Tony's to the mix. I just think they work better when sauteed together with some Cajun love.- The recipe says to cover the beans et al with 2" of water. I was afraid that would make it too soupy, so I just did 1". As the beans cooked, I added about 1/4-1/2 cup of veggie stock and perhaps 1/2-3/4 can of Coors Light because I felt like the stock would add some substance and the beer, well WHY THE HELL NOT!I also added water along the way and you'll get a feel for it as you cook.
