Had my first crawfish of the season today (1 Viewer)

Usually there aren't decent size crawfish this early, but b/c of the unusually warm winter we had, they were decent size....but very tasty

Explain "crawfish season" to me like I bet on Ohio St. or Michigan.
Crawfish are typically bigger and more abundent in the mid spring....however this year, it looks like the "good season" will begin earlier

I have had crawfish etoufee once and loved it. Haven't found a decent cajun restaurant here in Utah to try it again since.

I have had crawfish etoufee once and loved it. Haven't found a decent cajun restaurant here in Utah to try it again since.
If I ever end up on death row, this will probably be my last meal. I just hope they catch me in Louisiana and not Utah.

You don't get the full flavor experience unless you take your pinky and dig out all the fat and innards from the head and eat them too. Did you at least try this?

Mud Bugs.

Is there a chance last year's hurricanes have something to do with it? As I recall, these bottom feeders are especially attracted to decaying animal tissue (ie - dead fish/animals that have started rotting)

I'm just guessing, but I would imagine they had an increase in both food supply and hiding places from predators (lots of shoreline slipped into the swollen rivers and lakes and created big mud banks).

We can (and I have) pull them out of Cherry Creek reservoir by tying rotting meat to a piece of string and they latch on like Rosie O'Donnel to a chicken wing.

OK. First off, Katrina was in 2005, almost a year and half. There were no hurricanes on the gulf coast in 2006, luckily.Secondly, the overwhelming majority of crawfish that ever reach a boiling pot are farm raised, not dragged out of a river, lake or swamp.

Lastly, the term "mud bugs" is not accurate. Properly purged prior to cooking, there is nothing muddy about a crawfish at all. Yeah, they live in or around some mud, but so do pigs and you don't call a pig a "mud cow". :unsure:

 
Never had 'em. When I was growing up we used to catch crawdads in small creeks just for kicks. Never ate one.

Back in December of '87 I went to Jax for the Gator Bowl between LSU and Carolina. While walking around the stadium we passed some booths with a vile smell. We learned they were cooking crawfish. Of course I had never actually heard them called that, I had only heard crawdad.

The memory of that smell has prevented me from ever trying them.

I like a good boil, but only for the corn, potatoes, onion, artichokes, and cold beer. Spending 1 hour working for 6 ounces of terrible meat is not my idea of good times.

I'm not opposed to trying new food, it's just that I thought they would taste similar to crabs and I LOVE crabmeat, lobsters, and every type of shrimp known to man.Try to explain what they taste like......is it more of a seafood taste, or meaty taste?

More like meat. Meat that has a ton of cayanne & garlic trying to make it palatable.(sp?)They are slimey and you have to make them puke first before throwing them in the pot of water. People are sick too...they enjoy racing them down a board into the water, grilling some live ones on the bbq...filing the toilet with them (those are some very loud screams coming from the first lady going in the john). Quite disturbing the games I enjoy. :thumbup:

They don't...they are a different creature. However, our blue crabs are much better. :blackdot: (Guaranteed way of pissing off someone from MD....tell them their crabs are inferior.)
I would MUCH rather eat crawfish anyday than mess with the pain in the ### of cracking blue crabs for 12 hours. Dungeness and King Crab are something else entirely.

Definitely more meaty, IMO. They have to be purged and cooked correctly as they can be absolutely horrid if the cook doesnt know what they are doing. In mouth feel they arent much different from shrimp, but seem to have a more buttery/fatty content.

I personally love the meat from the tail but you won't catch me ever eating that crap inside the shell. We can get frozen tail meat up here, and it's kind of pricey, but it's worth it if you like you some etouffe (sp).

Little bit of water and a lot of salt. Puke out the impurities and cleans em up a bit.
 
I was walking around a lake by my house last week and on of these buggers was on the path and threatening me. He was standing up on his tail and snapping his pinchers at me.

It was certainly bigger than I remember them being. This one was at least 4-5" long.

I've had crawfish before, but I'm not sure you'd want to eat a Jersey crawfish.

 
They are related to lobsters, and are somewhat similar in taste. Tipsy's chefs know more about food than he does.
