Had my first crawfish of the season today (1 Viewer)

I personally love the meat from the tail but you won't catch me ever eating that crap inside the shell. We can get frozen tail meat up here, and it's kind of pricey, but it's worth it if you like you some etouffe (sp).
Make sure you are not buying Chinese tails...they are the by the far the largest supplier of crawfish tails in the country/world. The meat is even more terrible. :yes:
 
My former employer was doing environmental work on a dam retrofit a few years ago, and we had to drain these old trout ponds and relocate the fish, because there was a potential that they were steelhead, which are protected in coastal California. As the ponds drained down to muck hundreds of crawfish started crawling out. Under the permit we were working under, we were required to "destroy" the crawfish, because they are non-native and predate upon native fish and amphibians.

My "method of destruction" was to gather them up in buckets, take them home, boil them, tail them, and make a jambalya out of them. Not bad, but a hell of a lot of work to get a bowl-full of crawfish meat out of all those tails. Plus a bunch of the females were gravid with eggs -- a friend was helping me cook them and the first one she opened up with eggs almost caused her to puke all over my dinner.

It was a damn fine meal though. :shock:

 
They're far from gourmet but I love em. Something fun about the social aspect of a good boil. Agreed with Tipsy though that the meat itself leaves a little to be desired... reminds me of frozen overcooked lobster.... but it's tasty when done right.

It IS a ####load of work for a small about of food but the beer and goading buddies into sucking heads makes the effort tolerable

:doh: Every customer that comes in from Maryland always gets the ball busting from me on their crabs. When we do soft shell crabs...there are none better. I've only had one MD. resident ever disagree with me after the fact.Our crab cakes are better too. :yes: :popcorn:

I won't challenge you on the softshells. Growing up a few miles from Ocean City, MD I had my fair share of seafood and love all of it, except for softshells. Had one once and that was enough for me.As far as the crab cakes go, no f'in way :thumbdown: ;)
 
A guy that my wife works with is originally from Louisiana and has a crawfish boil every year. It'll be our third year attending and my third year eating the chicken and hamburgers instead of the bugs. My wife and most of the others surround this huge table and go to work on these things. I suppose they are pretty good as he has them shipped from Louisiana and boils them in this huge pot full of stuff. Sorry to get technical on you, but I avoid sea bugs and all crustaceans.

Frozen? You don't know what you are missing. i love them and could eat them all day with beer, but you will also never see me sucking the head. :no: You ought to see my wife go to town on the heads though, seriously. sorry, about that. I had to say it.

LOLOh yeah! They both pale to Miami's Stone Crabs.not. Md's blue crabs = the best.

Are these spillway crawfish? spillway > all
These were farmed.....but very good size. If you're in the NOLA area, I got them from a guy who has set up on the corner of Power and Vets. $1.45/lb, a full $.20 cheaper than anyone I could find. They were very good.
I'm originally from the bayou (Raceland), and all the crawfish-getting places down there usually have nothing but spillway crawfish, so I grew to favor them. Still, $1.45/lb is a steal. Louisiana, on Good Friday, is one of the greatest days that one can experience. Need to find a way to get back down there this year...
 
We had some crawfish last night (Birmingham area) that weren't too bad. I think they used some Old Bay in the boil though.

As usual with crawfish outside the NO area, they were horribly expensive (5$/lb). But beggars can't be choosers.

What's the best you've seen in NOLA for boiled crawfish? I saw $2.89/lb in Terrytown last night ... but I'd cross the river for, say, $2.69 or less.

A restless soul and Katrina.Lost my job after the storm. A friend of a friend offered me a gig that required traveling a bunch. That was the way out I had been looking for and haven't looked back since. Came up here in '06. Quite the culture shock.

Yeah, I think I've heard of this. Definitely gonna have to look into it.Last year for Good Friday I went to one of these pseudo-New Orleans/Cajun restaurants here in the city for some crawfish. Was probably the worst crawfish experience I ever had. Their only saving grace was that they had Andy Gator on tap.
 
Had a great boil this past Sunday at my buddy's house/pool. Got about 100lbs of crawfish and boiled em up good with Corn, Potatoes, Sausage, Mushrooms and onions. The last two surprised me how good they were. :goodposting: Ended up having about 60 folks swing by and floated a couple kegs and had to get a couple cases as night fell to carry us through the evening. Things started at 1pm and finally died down at close to 10pm. All in all a good day ;) :)

My 6'8" Buddy getting iced. Almost as tall as many folks when on one knee. Luckily there wasn't much of this going on.

Anytime there's a slide involved schenanigans ensue

 
Had a great boil this past Sunday at my buddy's house/pool. Got about 100lbs of crawfish and boiled em up good with Corn, Potatoes, Sausage, Mushrooms and onions. Nice, those crawfish look great, they definitely don't look like the hard out-of-season ones at all. Sounds like a great time. I can eat just about anything boiled with crawfish that I would never eat otherwise, like onions, celery, but my favorite is garlic cloves
 
We actually had garlic cloves in there... forgot about that. Will definitley try some cauliflower next time. Thanks for the suggestion!

They were a little tougher than the ones I had in NOLA for Jazzfest... but they weren't too bad. Likely won't get them again this year though. Price skyrocketed to 3.75/lb due to a huge shortage here (drought down there or something?)

Dunno... that sucked tho. Regardless. Went very well. May do up a good shrimp boil later this year.
