How would I go about figuring out the proportions of a spice mixture? (1 Viewer)

A local mom & pop sells a mixture that I like, but I want to try to give it a shot on my own making some improvisations. The ingredients are printed on the outside of the package, but obviously, the proportions aren't. I asked the store owner before, but she said they get it from some guy who makes it and that she has no idea. She didn't sound too happy with me asking (understandable)...but still, I want to give it a shot.

I've tried googling the hell out of different key words, but the only piece of info is that it's standard for spices to be listed in decsending order by weight. Even if this is true, I doubt the guy who puts it all together knows this, let alone does it.

Anyone have any thoughts?

You're assuming he's an idiot? Why? Because he sells a spice mix out of a mom and pop store that you can't seem to figure out?

And what mom wants you walking in her store asking what are the ingredients based on weight for this item I am holding in my hand so I can make it myself and save money?

No wonder she seemed a bit pissed.

 
I had a Coke the other day and it really hit the spot, so I emailed Coca-Cola and asked them for their recipe so I could make it on my own and maybe tweak it here or there. They didn't even respond to my email! I'll bet they don't even know the recipe themselves.

yep. and I acknowledged this in my original post :shrug:

Doesn't stop people who like to cook every day from figuring things out. You can pretty much google a homemade version of most chain restaurant dishes

Tipsey freely posts his BBQ rub ingediants and some of the recipes he uses in his restaurant here on the site. Me asking the owner is no different...couldn't hurt....all she could do is say no (which I was cool with and completely understand)

If you want to break down a start with sodium content and work backwards
care to explain further? not sure how i would even go about doing this?
You know how much sodium is in it based on the nutritional content. Take the total weight and then the known sodium and adjust the rest of the spices accordingly.
I hear ya. Unfortunately, there is no nutritional content listed...this is literally a small mom and pop that slaps a sticker with the name and ingredients on the bag.

 
If there is an address on the back of the spice bottle write them a strongly worded letter demanding to know based on the NSA and Freedom of Information Act and I dunno, bring up Obama once or twice.

I would take the total weight and try and adjust the ingredients based on the order listed. But since it's not likely listed in order of amount like it's supposed to it will likely be a crap shoot.

Just guessing based on how I'd build it... Figure there are going to be "base" items like salt, sugar, chili powder, paprika (depending on what kind of seasoning pack we're talking). A total of 2T or so of these. Then 1T of powdered garlic or onions. Then 1t each of 3-4 other seasonings.

 
I think it is common to list the incgredients in order of magnitude but given that it is a mom and pop store, maybe not.

Colour and texture should be a good guide as would be smell and possibly taste (can you separate the input, in which order do the smells/tastes arrive)

This isn't what he's asking. He wants to remake anothers recipe and is asking HOW. If he wanted to make his own, the thread would have been titled 'I just made a killer spice mixture'.
