A massive thank you in advance for your time and any input. I play in a keeper league where you keep one guy and lose the pick for the same round he was drafted the previous year. I have the 7th overall pick in a 10 team snake draft. These are the players I have with what round I drafted them in last year. 
1- Zeke

2-Ekler

3-Kelce 

4- J. Taylor

5- AJ Brown

6- Josh Allen

7-DK Metcalf

 
Wow. That was a good draft. No wrong answers here, but I think I'd keep Metcalf. They're all good, but he's the lowest cost.

 
Yeah that was a really solid draft. I think the only choice is between Taylor and Metcalf personally. I think I'd probably lean to Taylor as much as I like Metcalf because DK was hit and miss despite his current ADP vs. Taylor once he became the bellcow was routinely solid. Since he was drafted low enough to keep him at a 3rd round cost, I like his value there.

In a keep one league treat it like a redraft and keep the best player.  The only caveat being with your first round keeper in that it may be beneficial to keep that available for draft unless you are drafting last and can keep Cook or CMC caliber guy in that draft slot.  For you with Zeke in the 7 spot there is an outside chance he is still there or someone you like better is available.  

In your situation it comes down to Taylor or Kelce for me and I lean Kelce because of the positional advantage he gives you.
