I am looking to find any articles that offer strategies for picking a team for fantasy football during the playoffs.  We pick:

1QB, 2 RB, 3 WR, 1 TE, 1 Def, 1 K

We are allowed 2 pickups during the playoffs.  The most points after the Super Bowl wins.  I know that you want to pick who you think will go all the way, but every time I try that, I always lose out to people that had wild card players going.

This site will have their playoff rankings and Bloom will offer playoff strategies. It's all based upon # of games being played and predicting a winner. Now, if you really believe in a team to advance and win then pick those players. If you like say LAR to beat the Falcons and go into MIN and beat them then take Ram players as they would get you at least 3 games, possible 4. AFC side tough not to argue with NE or PIT advancing.

 
I'd lean towards Pats and Saints players. The Saints have the highest probability of going all the way from the wild card round so I'd bet heavy on them. I think a lot of people will be on Brady so I would lean towards Brees (plus he gets an extra game in), I'd then go with either (Kamara or Ingram) and Gurley, WR's I'd look at Thomas, Cooks and Hogan. Gronk and The Saints D. If Gurley is out after one then pick up Burkhead or Lewis. If the Saints are out so are you.

That strategy seems predicated on the rules allowing multiple teams to have the same players.  In my playoff league it is a snake draft format with exactly 12 teams so that every team gets one QB, one K.   So there is strategy on whether to wait or not on QB and there would be virtually no way to be able to get the players you mentioned all on one team.  Very rarely are you able to put all your eggs in any of the favorites.  Those players get spread out quickly.  There is always one or two teams that go eggs in a wild card team.  The Saints may be a possibility but the hype seems high on them making a run or the Chiefs because I think they put up a lot of points this week and have shown they can score on NE.  I doubt they upset but two high scoring games could be enough if the favorite players are spread out enough.
