Please help. How do you eat them? I belong to a CSA and we get them once a month or so. Ive tried boiling them and they taste exactly like the nasty ones in a can. I actually dont mind them roasted and chopped into little tiny pieces and added to other roasted veggies, but too many and they take over the whole dish. Ive had them roasted. :X Pretty sure I just dont like the taste. They're not really like any other food. Very "earthy" and almost impossible to hide in a dish (unlike Kale which is also nasty when eaten by itself, but can easily be hidden in things).Beets are easy: wash, wrap in foil with a little salt, pepper and olive oil. Roast until they soften, maybe 30 minutes depending on size. Let cool and then the outer skin should peel away pretty easily. I eat them straight like that but with goat cheese and balsamic they are even better. They keep well, too, so roast more than you need and refrigerate the rest. A great, healthy snack. The purple will stain your fingers, though, which is the worst part. Oh and don't be alarmed if your poop turns a little red.
