Knowing that the OL Jets lost an important piece (Vera-Tucker), I'm hesitant to start Fields against the Pitts DEF or Prescott against the Phi DEF.

Are you favored or an underdog. I think Fields has the ceiling and Dak the floor. So based on your matchup it would dictate which I wanted (floor or ceiling).
