I shred either Colby Jack or Monterrey Jack towards the end of the cook and let it melt quickly into the meat and sauce.  Yumm!

 
Not sure what dumbfounds me more, people that have never thought of putting cheese on a sloppy joe or people that actually thought of putting mayo on one
I don't criticize anyone's eating combos, but the thought of mayo on a Sloppy Joe makes me gag

 
What do you use for a basic grilled cheese? 
Immediate thought also. Followed by me wondering if people butter both sides of the bread, mayo, use 2-3 slices of cheese, oil the pan and heat at a 2-3 

(Swear I'm a health nut but as "bad" as all this food is I'd polish MULTIPLE sandwiches off in a heartbeat if it was in front of me)

Why do you fatties need to ruin something like a sloppy Joe with unnecessary things?

 
Mustard and dill pickles (slices, or spear on the side). A griddled bun is a nice touch.
