I don't know what cuts they use to form these sheets of beef, but there's no way they are wasting ribeye on it. My guess is that it's finely minced/liquified round flattened out into sheets with a binder to hold it all together.Probably haven't had them in 30 years, but they're just shaved ribeye, right?
cooked flat but then break it up before serving.Broken up or cooked flat?
I break it
Allegedly. I loved them as a kid but haven't had it in 20 years.Probably haven't had them in 30 years, but they're just shaved ribeye, right?
Same here, except I haven't had Steak-umms since the '80s. Hypothetically, I could still like them.Big fan as a kid - now no.
Flat and then laid out on a sub bun.Broken up or cooked flat?

Do folks in Philly ever use them to make faux cheesesteaks? Or is that too great a culinary sin?Sautee onions and bell pepper.
I think that may be a first degree felony in Philly.Do folks in Philly ever use them to make faux cheesesteaks? Or is that too great a culinary sin?Sautee onions and bell pepper.
Never would have guessed there was nothing but beef in those.I don't know what cuts they use to form these sheets of beef, but there's no way they are wasting ribeye on it. I just use 2. But, did you know that each "sheet" or whatever you want to call the frozen serving is actually 2 pieces? It takes skill, but I always split them while cook, so I have 4 single layers. Chop it up, fills up quite nicely. How many do you cook to fill a roll? I usually need at least 3 of them.
if I go bread 2. Roll is 2 to 3 for meHow many do you cook to fill a roll? I usually need at least 3 of them.
