I need to pick up one of the following TEs to fill the void for Kelce's bye next week. Which should I grab from these options?

 
Bennett @ CHI 
Griffin @ Rams 
Derby vs NE 
Ebron vs CLE

V. Davis @ Saints

I'd go with davis. Decent matchup, and its unlikely Reed is back for that game.

Not Griffin since Fiedorowicz will likely be back in week 10.  Also I think Vernon Davis gets Minnesota next week, Saints in week 11.  I'd consider Fiedorowicz, also Kittle against the Giants if available.
