Week 1 I typically just go with the guys I drafted to start. Pretty much just keep it simple without too much thinking. We don't know what we don't know yet so trust what you drafted based on. It's where you put in the most time trying to figure it out.
All that being said, since you get TE bonus pts I go with Goedert out of these three. Plus you get a guy in the first game Thursday which is always fun.
