I agree 100%. Fresh pasta tastes better (to me) but even so, despite how quick it is, I still only do it every once in a while and would never do it for fancy shapes.
I have the old style pasta roller and it works fine. Not overly expensive. In lieu of any gadget you can use a rolling pin and roll it until its pretty thin. Pull it to the end of the work surface and from underneath, blow on it really hard. If it flutters is probably thin enough. Then roll...

This winter has been brutal so making more soups, stews, and chili's than normal. Tonight I'm making a ham and potato soup. Pretty basic. Ham, potatoes, stock, carrot, onion. Simmer for a few hours, Add milk, sour cream. Cook a bit more. Done.
I see nothing wrong with cornstarch slurry in the right dishes. Roux's in others. Especially for home cooks. Screw those pretentious judges on chopped.
