From Pensacola, FL to New Orleans. Where to stay, eat and relax? Me and the wife driving and would prefer to stay on the coast or nearby. Would not mind a a couple of beach days (late summer).  Five days total.

Orange Beach, Destin, Gulf Shores, lots of places depending on what you're looking for.  

We go to Orange Beach - not too crowded, relatively inexpensive, good places to eat, and family stuff - go carts, etc.

We will be in Pensacola but want to take the long way home through New Orleans, so basically a road trip from Pensacola to New Orleans. A couple of days somewhere in a beach area (Orange Beach??) and then good eats and cool places to visit.

We love Cafe Grazie.  Always have a great time at the Flora-bama.  Better without kids though ...the crowd can get pretty rough in the evening.  Love their fried fish.  

Then we make the short trip to Gulf Shores and hit the Track.  

 
Biloxi is fine if you like casinos.  Mary Mahoney's is a good restaurant.  The beaches there arent much to write home about.  Just remember that the closer you get to the mouth of the Mississippi, the less attractive the beaches become.

Noticing your avatar, any suggestions on say your top 3 or 4 restaurants in New Orleans?

 
I'll let psychobillies answer first, but it depends on the kind of food/experience you are looking for.  
I want to experience authentic New Orleans. I don't want to break the bank but since we don't drink I can still go high end. For the two of us, I would be willing to spend $100 to $150 to have a meal that we would remember.

Even without drinks, $150 for 2 may be pressing it at the upper-end places if you are looking for a couple apps, a salad, coffee and dessert.

I was gonna come in here to post the New Orleans thread link that Binky already posted.  Just scan the first and the last few pages there.  Guys like SaintsInDome, Tiger Fan and Tipsy are much more knowledgeable about the restaurant scene down there than I am.  I haven't eaten at nearly as many places as they have, so my opinion wouldn't be nearly as valuable.

Authentic New Orleans for 1 meal = Commander's Palace IMO.  Tons of good info in the thread linked above.  Feel free to ask any questions.

Just did a two-night trek to NOLA from P'cola over the holidays...with in-laws in P'cola.  We planned last minute...got the Hilton for $90/night...and hit ACME / Port of Call / Mr Bs, and called it a day and a half.  Overall awesome quick cheap trip.

i definitely wouldn't spend any time between the two cities, other than OB.  Mobile is a hell-hole, and Biloxi is just gambling.

 
I just stayed at the Palace Casino in Biloxi a couple of weeks ago. It is a non-smoking casino - the only one that I'm aware of down there. It is small but rooms were inexpensive for a pretty big room. An OK place.Bed wasn't the most comfortable but room was large. The beaches are a mess in Biloxi but the casinos have pools. I don't know that I would spend anytime there unless you had to scratch a casino itch. Ride from Pensacola to New Orleans is short - Ocean Springs has the Shed BBQ and it's ok for Q( not Austin good) - sometimes they have music and it is a neat little stop for food off the highway - you could do a lot worse. You could set up a swamp tour on the Pearl River area(Honey Island - Miss/LA border) on the way to New Orleans - but I would get to New Orleans as soon as I could vs Biloxi. There are also a couple of forts at the inlet to Mobile Bay to visit from Gulf Shores. Personally I'd stay closer to Destin east of Pensacola vs heading staying in Gulf Shores(or Biloxi) which is about the limit of clear water in the Gulf. Also be aware that end of summer is hot as Hades down there and swampy swampy swampy - lots of restaurants close in August in New Orleans. Most of the great musicians are out of town up north touring in cooler temperatures. And of course it is Hurricane season so you need to keep your eyes open on the weather forecasts.

Agree.  Could be Gallatoire's, Arnaud's or Brennan's though.  And maybe Mr. B's on a slightly more casual/fine dining side.

No kids, just me and the wife on this trip.

Since you're driving and drinking isn't a concern...check out R & O in Metairie (about a 15-20 minute drive from downtown).  This is a very casual, traditional New Orleans place.  You can get a wide variety of options: Fried Seafood, Sloppy Roast Beef Po boys, Seafood po boys, Boiled seafood, etc.  All of it is good and very reasonably priced.  It's gonna be heavy, so make sure you're not full when you get there.
