I know that there is a grace period between when players/coaches retire and when they are eligible for the HOF, and that this is because there is always that off-chance that they could return, etc.

If, say, Brett Favre retired after this season and then died 3 months later, would he be immediately eligible for the HOF? or would he still have to wait the mandated 5 or 7 years or whichever it is?

This is the stuff I think about at 1:47AM on a Friday morning.

 
I think it's more like HOF "guidelines" at that point. They could easily waive the five year window and induct him whenever. It's a self-regulated body so they can do whatever they want, whenever they want.

I could be wrong but I think the NHL inducted Gretzky immediately after he retired, or a year at the most.

On January 23, 2000, Derrick Thomas was severely injured in a car wreck, while driving on I-435 on his way to Kansas City International Airport, where he was going to fly to St. Louis to watch the NFC championship game. The accident, which occurred when Thomas lost control of the SUV he was driving due to the icy road, left him with debilitating spinal cord injuries, that may have been prevented if he was wearing a seatbelt. He died on February 8, 2000, in Miami, due to a massive pulmonary embolism related to his injuries.After his death, Thomas was elected to the Kansas City Chiefs hall of fame in 2001. He was a finalist for election to the Pro Football Hall of Fame in 2005, his first year of eligibility. In January 2006, Thomas again was named a finalist. He again was not elected, but remains a strong candidate for consideration in future classes.

Roberto Clemente was inducted to Major League Baseball's HoF on a special ballot. In addition to Gretzky, 8 others have had the 3-year waiting period waived in hockey. Football may be different.

Unless it's been changed or I am mistaken, the Pro Football HoF can accept coaches in the next election season immediately after they retire. (No waiting period.)

The only restriction is that a player must have been retired at least five years before he can be considered. For example, a candidate for the 2007 class must have concluded his career not later than the 2001 season. For a non-player, there is no mandatory retirement period, but a coach must be retired before he may be considered.
