I write up an injury summary for all relevant skill position players (not including IDP, sorry IDP guys) - I am working on updating that right now, but the one that was posted
8/23 is here. Where the coaching staff/trainers have given a time table or a target date, that's mentioned. Unfortunately, with a lot of injuries there is ambiguity in play -
For example, the Kevin Jones situation in Detroit. Reports out of Detroit indicate that the front office prefers to put him on the PUP to make sure he's absolutely, positively 100% past the Lisfranc injury, while the coach staff wants to keep him active in case he's fully recovered before week 6 (they still expect him to be out at the start of the season, but believe he could be ready by week 3 or 4) - a decision one way or the other is expected on Thursday (or Saturday, at the latest)

Clinton Portis is another player who exemplifies the uncertainty that surrounds certain types of injuries - the coaching staff and training staff said for months that they didn't think his knee tendonitis was going to be an issue by regular season, and yet the latest reports are that Portis is still limited in practice. He's a game time decision for Thursday's final pre-season game, so we'll only know after the fact on this week (and possibly the season opener, too).
Hope that's somewhat helpful - getting accurate information on injuries is always a challenge as players can aggravate them in practice during the week (the situation with each guy is always in flux, with some recovering as expected and others having unexpected setbacks) and then suddenly show up as did not play or inactive as a result of "game-time" decisions...
I give it my best shot to keep on top of all the latest injury news each week, but certain organizations (New England, Tennessee to name 2) make it especially difficult each week by being secretive about injury status - or downright tongue-in-cheek (New England listed Tom Brady as probable with a right shoulder injury every week last year - a shot at the league for fining coach Belichick for NOT reporting a slight shoulder tweak/minor injury in the past). Also, players are incentivized to under-report injuries in order to stay on the field to hit certain "performance bonus" triggers in their contracts (a certain percentage of offensive snaps played, for example, or a certain number of tackles/sacks/whatevers).

Edit to add: In season, the Monday early injury recap does cover defensive players, too - once I have the official NFL injury report to check against, it becomes a managable task to keep track of all 53 players on all 32 teams, but with expanded rosters in pre-season and no official report to at least point me in the right direction, it is too much to cover with IDPs included.
