Is it possible to access the internet history on an iPhone after it's been erased on the phone? Maybe through the router which the device got the signal from? If it's important, we have a Pakedge K60D router.

It looks like that model router does web filtering. I guess you may not have it turned on. Still having that functionality usually means it logs usage. Now whether or not it does it if the filtering isn't on I can't answer. If it does it will do it by user/device.
also check if a second browser has been installed. You may want to put some sort of program like net nanny on the phone, which will block certain sites, as well as log website data even if the user was viewing in private browsing.
If there ever was a backup done on the phone via iCloud or to a PC, then you could simply restore it from that. Otherwise, you're likely looking at spending some $$. Only other thing you could do is call your ISP and see if they have anything, as they likely have records of your internet history. I highly doubt they'd release any of that info, though. I don't think it's likely that your router will store any of that information (without actually having looked that model up), but I could certainly be wrong.
You could also jailbreak the phone and change the way that safari clears it's history - essentially you could make it seem like safari is clearing the history, but it wouldn't be. Instructions here (not for jailbreaking, just for editing the particular file).
