Sure, there are people who picked up the Packers or the Steelers in the mid rounds of the drafts, and even those who are relying on the team defense by committee approach. Personally, I don't like passing up on a high upside player or wasting two roster spots on a defense...so I usually just grab a team at a time and hope for the best. With week one coming up, I think there are two options from the waiver wire that will be good choices...
1. Arizona Cardinals - The Cardinals are historically better at home, and they are playing a rookie QB in his first appearance. Things could possibly go horribly wrong for the Cards in this game, but odds are they will hold Carolina to under 20 points and probably pick up at least a few turnovers. Plus, the great thing about a running quarterback is that you pick up at least a decent amount of cheap sacks.
2. San Fran - They are playing the Seahawks, who are widely expected to have one of the worst offenses in the league, with a starting quarterback who has never proven anything. San Francisco doesn't have a terrible defense, and they do seem built to win low scoring games...but their offense is so bad, it could open the door for a high scoring game if they are consistently losing the field position battle.
Personally, I think I'm going to go with the Cardinals this week, mainly because I see them as a team that I think I can hold on to for the next few weeks with their cupcake schedule. As a Panthers fan, it pains me to go against my team, but I just don't see a way that the Cards don't at least put up respectable numbers.
