QB
Luck and RGIII are kind of obvious, but also the best answer. If you can get one of these guys even in the mid-rounds, they'll be nice keepers. In terms of deeper in the draft, I always like the upside of guys with mobility and the potential to put up rushing yards and TDs. So I'd look at Jake Locker, Ryan Tannehill and Russell Wilson.
RB
Some of the rookies that are being drafted late like Ronnie Hillman and David Wilson are obvious targets. I think Robert Turbin is a potentially interesting last round guy. While its looking like Lynch won't be suspended this year, chances are decent that he'll get suspended in 2013 and that's a nice offensive system for the RB. In terms of free agents, Ben Tate and Rashad Jennings are talented young guys who are unrestricted FAs next year and could land in a good situation. I'd also keep an eye out for Isaac Redman and Rashard Mendenhall. Mendy's a FA and could end up in a better situation and if he leaves, Redman could be the guy in Pittsburgh. Both are going pretty late this year.
WR
Kendall Wright and Kenny Britt are interesting late round guys. Both have a lot of talent and Tennessee should throw the ball a good amount. One could emerge next year. Danny Amendola is a guy I find intriguing. He's an unrestricted FA and rumors are the Pats have sniffed around him. Possible Welker replacement? Brian Quick is pretty raw, but he could end up being Bradford's go-to guy. I don't love Michael Floyd's upside opposite Fitz, but if Arizona brings in an instant impact rookie QB next year, he could be interesting. I'd also look at the young WRs in Indy, Austin Collie, Lavon Brazill and TY Hilton. Collie may be finished due to the concussions but one of these 3 is likely to be starting next to an aging Reggie Wayne with Luck throwing the ball a bunch.
TE
Kyle Rudolph and Jermaine Gresham are my two favorite sleepers for this year and I'd be fine starting one of them right now, but you can get them late and they could be long-term fixtures as top 10 TEs. Rudolph could be Ponder's go-to guy and Gresham will be the de facto #2 WR in Cincy for Dalton. Both guys have tons of talent. I'd again keep an eye on Indy with both Dwayne Allen and Coby Fleener. Luck is going to be a 4,000+ yard QB by next year and the TEs will be a big part of that. I personally prefer Dwayne Allen, but Fleener has a ton of upside also.
