I totally agree about the importance of processing and knowing where your teammate is going to be before he's even there and even if you can't even see them. That's a great skill set to have, and you want people to know how good your skill set is so that they want to invest in you. So I take your point.
I certainly wasn't diminishing the importance of processing and working with limited means effectively. Enough of an arm and an ability to process are probably the two most important things for a quarterback to have. You have to see it unfold with your vision (or brain, in this case) and then be able to get it there on time with your arm.
I was more thinking about his wallet. Purdy hasn't signed his extension yet. All things constant, the team, I'd sure, would prefer he was 6'5" and that he could actually see over or through everybody, right? I mean, I was kidding, but you don't want to tell somebody that's about to invest $150,000,000-plus to retain your services that you can't even see what you're doing half of the time. Not that it necessarily matters, and SF probably knows that and doesn't care precisely because of the reasoning you gave, but somehow those are tidbits of information you keep under wraps most of the time. Probably not a big deal at all and I gave it the appropriate seriousness I think it deserved by comparing it to The Wizard of Oz.
It struck me as "Whoa. He actually admitted that." It takes guts to say that and hopefully doesn't ding him in San Francisco's eyes or give other teams a competitive advantage knowing now that he's playing blind nearly half of the time.

I could well be wrong but I think his point was most all QBs have that problem. The 6'5" can't see over the linemen with their hands up either. Plus, it feels like the day of the 6'5" / low mobility archetype is fading a bit.

You're probably dead-on about the first part. I wouldn't know having not played QB anywhere near that level.
The bolded is what really surprised me and prompted me to respond. That he admitted it to everybody was a bit of a jaw-dropper. They generally don't admit things like that. Anyway, cool stuff.
