Creating a Home Sports Bar (1 Viewer)

So, I am creating a home sports bar which I think will be awesome. I have a 19.5-foot long wall unencumbered by doorways, fireplaces or anything, and am considering different options.

1.) A projector with a ~110-inch screen flanked by a couple 65-70-inch TVs. The projector would primarily be split into 4 feeds, so the equivalent of 4 games on 55-inch screens.

2.) Four columns of TVs. Two of which being a couple stacked 42-inch TVs and the other two being single 65-inch TVs, probably alternating.

I will also have another couple TVs in other parts of the room.

I believe the primary piece of equipment I will need is an 8x8 HDMI matrix. This will allow 8 inputs to be split to 8 outputs in any desired manner. These inputs will be 4 DirecTV receivers (unfortunately the only way to get Sunday ticket), 2 X-Boxes (from which I can get local channels so that I can have 6 distinct NFL games showing) and 2 Fire/Roku.

If I go with the projector option, I would also need a 4x1 HDMI multiviewer, allowing the projector to show 4 feeds. In this case, I would plug 4 of the outputs from the 8x8 matrix into this 4x1 multiviewer that outputs to the projector.

I am asking for any thoughts or advice on all of this, from brand recommendations to alternative set-ups to anything. Also, I am not sure if “daisy-chaining” from the 8x8 to 4x1 would cause any problems. I am not nearly smart enough to figure out the answer scientifically, but the stuff I've read on the internet about similar processes leads me to believe that it would be okay.

Anyway, thoughts, opinions and advice are much appreciated.

 
No, actually just gonna have a couple 4-foot long bar-height tables behind the furniture. It will be a bit ghetto from an interior decorating perspective, but awesome from the watching a bunch of games at the same time perspective.

I'm partway done with this. I have had the TV's in since the 2014 season.  https://image.ibb.co/gmQUWF/IMG_0268.jpg The center part is now complete with 4 - 37" TVs and a center 55" TV. I made it where the 37" TVs can actually come out of there and be replaced with shelves.  I have the TVs all on Direct TV receivers. I actually have 2 dishes on the back of the house. 1 feeds 3 TVs here and the other feeds 2 along with 2 in other parts of the house. Currently working on finding someone to build the bar which is in the form of a triangle. That part I'm not going to take on.

 
How many receivers can you get with a DTV subscription?  I have been thinking about doing the investment for multiple TVs with Sunday Ticket after how much I spent at the bar the last 2 years.

The max you can check out with online is 6, but don't know if you can arrange more. But with network TV and the DTV app for streaming, seems like you can everything if you want. I believe the most simultaneous early kickoffs is 11, and that's rare.

 
why 2 dishes?  Is each one a separate cost?
No. One is an old round one I have not upgraded yet. It's still fine and feeds 3 TVs. The other is a new one with HD capability. Eventually I'll change it out. They are on columns on the back of the house. It's a symmetry thing. A pet peeve of mine.

 
I think I'd pass on the idea, you won't use it as much as you think you will and you'd be better off investing the money instead.

Think about how cool it would be to project 4 different pr0ns at the same time!
