Thanks, definately not offended by your question as yes, I post process every image that I take. I never get them coming out of the camera exactly right. I don't always do HDR though either. Some of the things you can definately do in Elements are levels adjustments and curves adjustments, which will at least help with your contrast and should brighten up your highlights and darken your shadows. For colors specifically, you should make a hue/adjustment layer and adjust your colors in there so that they get to your liking.
Also, are you shooting RAW or jpg? I love the white balance adjustments that you can do in camera RAW before you even import it into elements. RAW is going to enable you a lot more control over the file in post processing than a jpg will, the Camera RAW dialog is worth experimenting with.
