FBG Chefs Help Needed - Soup Bones? (1 Viewer)

Cleaning out my freezer and I have like 10 soup bones.  I don't want to throw them away so what do I do with them?  Can I bake them and extra the marrow and whatnot?   Beef soup?  I also have a ton of beef cubes and ground beef.

 
Making this tonight, Judge's chili tomorrow with the broth of the soup bones I'm making in the slow cooker.
Using it for Judge's chili would be great but kind of guilding the lily ...you want to taste all that deliciousness on it's own - at least for one dish.  I also like guru's idea of making broth cubes if you have room in the freezer.

We don't really have a true butcher around close - the place that is the closest, I tried to get leg bones and have them saw them in half ...they don't get the leg bones.  That throw away stuff used to be damn near free - now you pay $15+ for one with some toast for an appetizer.

I'm definitely making your recipe tonight.  What about the marrow?  Is that what you're talking about as an appetizer?

 
Make a batch of stock or Demi. If you do not want to use it immediately you can freeze it.  As mentioned above the ice trays work well for smaller portions.  You can run a second batch or stock that still has flavor also..... Called a remoulage.

Best uses are soups and sauces.

 
I'm in the same boat but I have a bunch of ham bones. I guess I could make some stock with this to cook with some lima beans or black eyed peas. Maybe some 15 bean soup. 

 
All I know about soup bones is the best soup I’ve ever had - a split pea my mom makes - she uses the ham bone for. One of my top 5 meals especially after it sits in th fridge for a few days.

Report back on how it tastes. I may make tomorrow. It says meaty bones.  Do you think if I went to the butcher and asked for meaty bones for soup he’d know what I’m talking about?  Also what kind of bones should I get?

ham broth and corn broth are both very underrated as all-purpose recipe additions. have cubes of both in my freezer for pop-ins

 
if i got ham bones, i bag my veggie trimmings for the week and throw em in. onion ends, carrot tops, garlic skins, whatever and whatever veggies are starting to go. i usually take the chance to get rid of spices that are getting old by maybe toastin some of em in oil at the bottom of the pot before pouring the water in, too. roasting your bones beforehand adds to flavor too. we dont waste nothin up here in Vt

 
Can I roast some of the bones from the soup bones for the marrow?  When I google marrow bones, the bones are always like 6 inches long and the soup bones are only about 1/2 that.

Oh, and how would I cut the bones in half?  I don't have a cleaver.

I think that's the damn catch ...you need a butcher with a band saw.  

If you're making stock, you don't need to cut them, the marrow will work its way out.  

 
How did you end up with so many bones in the freezer?  Usually the bodies I store in the freezer don't decompose.
