Healthy food recipes (1 Viewer)

I HATE veggies. I actually loathe them but that's besides the point. My boys are 4 and 1.5. I want them to grow up eating veggies but when Daddy doesn't eat them it's kind of difficult to make them. So who has recipes for veggies that make them taste less veggie.

A few I have done and were "ok"

Grilled asparagus - toss in EVO, add Salt and pepper then top with a bit of Parmesan.

Spaghetti Squash - baked it but it was still crunchy and reminded me nothing of spaghetti.

 
Grilled/sauteed asparagus with a drizzle of olive oil and salt/pepper

Roasted brussel sprouts with the same treatment

Roasted kabocha/acorn squash. I like to rub the cavity of the squash with the adobo sauce from a can of chipotles

Grilled zucchini with olive oil, salt, pepper and italian herbs

Roasted cauliflower

I was not a big vegetable fan as a kid, but my parents always microwaved them with a bit of water in the tupperware. The key is to roast or grill them

 
Kids arent going to like that stuff. Mine will only eat steamed broccoli (while its hot) or raw carrots (dipped in a small portion of ranch).

Find something they'll tolerate (notice I didnt say like) and force them to eat it before getting seconds of what they really want. Explain to them that sometimes we eat things because they're good for us, not because we love the taste. I put a small portion of something they like (a taco, slice of pizza, whatever) and a portion of veggies on their plate. They dont get more taco/pizza until they finish the veggies and they dont get snacks/treats later if they dont eat their veggies.

Your kids may not like this one, but you should.

Parmasean-Roasted Cauliflower

1 Head Cauliflower – cut into florets

1 Medium Onion – sliced

4 Thyme Sprigs

8 small garlic cloves

3TBLS Olive Oil

1/3 C Parmasean
[SIZE=10pt]Preheat oven to 425. Toss first 3 ingredients in olive oil and roast 20 minutes. Add the garlic and roast for another 20 minutes. Toss with parm and roast 10 minutes longer. Toss with cooked whole wheat penne pasta and serve.[/SIZE]

[SIZE=10pt]PS - spaghetti squash is disgusting. Just because it looks like spaghetti does not mean it tastes like or should be served like spaghetti.[/SIZE]

 
just lost a nice recipe for butternut squash and apple thing.... dice each up small, put in pan w/ EVO, salt&pepper... something else- fennel? saute until things get a little soft but still have a bite. eat.

My kids eat all of the stuff I described. They are 4. The key with the OP is to makes vegetables he likes because if he isn't eating it nor will the kids. People in this country are under this false impression that kids will only eat junk food so then that is all the feed them. Kids will eat anything and everything, but if you only feed them all that processed crap that is loaded with salt and sugar then they become addicted to it.

That's great, you are lucky. My kids are picky (seems like most are). I dont really care whether they eat broccolli/carrots or they eat asparagus/kale/spinach/any green veggie, so I just take the path of least resistance and serve them broccoli/carrots all the time. Hopefully they'll outgrow it. The key is to find something/anything healthy that they will tolerate and teach them to make it part of the regular rotation.

 
oh- and btw, my kids are similar in terms of veg they'll eat... but they WILL eat edamame, lightly salted. either in the shell or out.

yes, thats a great one... mine will eat them too... also nice that you can buy them frozen and they're still really good

 
Any downside for a kid to just put a generous quantity of butter or cheese on the veggies? Provided your kids aren't sitting in front of a tv all day or pounding down sugary drinks all day, the fat shouldn't be of any concern.
