If you don't have a go to menu the morning of Christmas/holidays and want to kick it up a notch I can say this is fantastic.  Done it the last 2 years.  Coffee, open presents, I get out the cast iron pan and start making this.  It was in the Chef's Corner article on United Airlines magazine.  Phenomenal.

Made these egg bakes (mushroom, ham & cheese) on Christmas morning. We had a buffet of a bunch of stuff chopped (ham, chorizo, mushrooms, shallots, peppers, couple kinds of cheeses, etc) for people to make their own. Cooked them in the oven similar to the recipe (maybe a bit longer because there were 7).

We did the cooking spray, but used a brush to spread it around to make sure it didn't puddle in one area.

They were delicious, easy and fun for everyone to make their own.

It's good. Served it this morning when meeting my daughter's likely future in-law's for the first time.  Tasty and good presentation for the holidays.  It's not the level of the chili or creamed corn but still solid.  Hope it works out.  I'm making the run to Costco first thing tomorrow morning for massive amounts of King Crab legs. NYE dinner will be off the hook
