I moved into this house and in the furnace room where the home security is theres like a giant hub of tons of different cables. im pretty sure the house has Ethernet wired throughout. what is the best/easiest way to test this?

then connect a router/hub in the furnace room, and a laptop or computer in those certain rooms. if the computer connects, you know what wire goes where.
Are there ports available to connect to in the furnace area? It could be a punch block for RJ-11 (analog phones), in which case those are only wired for phones.
