Are you using whipping cream and then beating it to fluff it up, or are you mixing it into say cool whip or something more like that?
Heavy whipping cream and then using a hand mixer to whip it for 2 minutes.  Cream is zero carb and pudding 8 carbs per serving.

 
One change I'm making to 'breakfast' is instead of coconut oil/butter I'm using coconut oil/ 100% pure cocoa powder. 

Less fat, more fiber and other benefits from the cocoa. Frees up my fat eating a bit throughout the week.

Not quite 0 carb - catch is that because it is below 0.5 carbs per the usual serving size of 1 tablespoon, manufacturers can list it with 0 carbs - 1 cup of heavy whipping cream (liquid) actually has about 7 carbs but about 800 calories. How much cream do you use - looks like it can still work out to be a fairly low carb treat, though a bit heavy on the calories. I still want to give it a try, but may have to use it as more of a cheat meal.

 
I am getting sick of eating salads for lunch.

Any other keto ideas I can throw in the lunchbox to take to work?
i've cooked up steak and chicken the night before for lunches. Make steak or chicken strips to add to your salad, or eat on their own with a side

Turkey or roast beef with some slices of cheese.  Can make them into little meat/cheese rolls if you are so inclined.

 
Eating well while traveling is becoming easier.  Having grilled wings with a dry rub tonight, sides of broccoli and asparagus, and some unsweetened tea with lemon. Chipotle for lunch and coffee in the mornings.

This has been one of the things I miss most since going Keto.  Sure, I can just do it without the rice, beans, or corn salsa, but it just wasn't the same.  I tried making cauliflower rice at home, adding cilantro and lime juice, and adding it to my bowl, but it still wasn't the same.  But, I made something (based on a recipe my wife made the other night) that was awesome.  Cailiflower rice with cilantro, some buffalo chicken lunch meat slices cut into small pieces, some sour cream, a tablespoon of cream cheese, shredded cheddar, canned green chili salso and fresh cilantro salsa.  Didn't taste like Chipotle, but it was almost better than Chipotle with cauliflower rice because it tasted different, and not like a cheap knock off.

I eat 2 slices of meatloaf and a veggie from a hot bar at a grocery store near my work almost every day. If I was a smart and/or not lazy person, I'd probably make my own low carb version and bring it. I know it has some breadcrumbs and a little bit of ketchup, but it doesn't seem too carb-laden that it affects gradual weight loss or the way I feel. From what I can tell, nutritional info on your standard old meatloaf makes it moderately low in carbs. It's filling, and I'm good to go for the rest of the day. I do usually skip breakfast and stay really low carb for dinner though. 

 
Acric Zero has a salted caramel that's 140 cal per PINT.

I crushed up a kirkland nut bar into a pint this weekend and it was fabulous 

PS, Arctic Zero chocolate-peanut butter is garbage 
Gator - there are also 20 net carbs in that 140 calories.  That is a whole lot of calories if you are going keto.  

Also, a Kirkland Nut Bar has 210 calories and 7 net carbs.

Heavy cream - 0.42 net carbs per tbsp.   A little more than half the carbs of whole milk.  

It can add up if you are staying really low on net carbs.

Turkey and cheese ...maybe some olives.  A few slices of roasted red pepper ...if you have a couple of carbs to spare.  

I have taken to club sandwiches on keto buns.  2 oz. turkey, 2 slices swiss, 3 thick slice bacon slices, keto bun (toasted), 1/2 roma tomato, 2 romaine lettuce leaves and a little mayo.  

A little under 600 calories and 4.5 net carbs

Your home cauliflower sounds awesome - I am too lazy to do that much. I microwave frozen cauliflower for 6 minutes and toss in a bowl with wing sauce. I try to use a fork.

My recipe wasn't that much work.  The cauliflower rice was left over.  You can buy frozen cauliflower rice, and not have to rice it yourself.  It's a great substitute for rice/filler in a lot of Keto recipes.  The rest of what went into it was stuff just sitting in the fridge.

 
Gator - there are also 20 net carbs in that 140 calories.  That is a whole lot of calories if you are going keto.

Yup, i have this maybe once per week (not always with a nut bar) and it's a day i have those carbs to spare. On "cheat" days I'll have between 25-50 carbs, other than that I'm <25 net daily.

Costco also sells bags of cauliflower rice (well, at least my local Costco has for the last 2 months or so). Picked up a bag last week, been trying to figure out how best to use it. I'm planning to grill some New York steaks tonight, perhaps I can steam the cauliflower rice and add some cheese, etc. to have as a side with the steak, similar to mashed cauliflower.

Totally craving brats now. We bought some extras for the 4th that I will thaw out when I get back to Kansas.  Brats and sausages with sauerkraut and horseradish mustard are divine. 

 
Sometimes I find myself tempted by cookies or bread or something and my mouth is literally watering and it seems like I can't live one more minute without gorging on what I lovingly call "poison". Then I eat something keto-friendly and the craving instantly disappears. I find my success on this diet has been directly tied to not letting myself get too hungry, when I am particularly vulnerable to these cravings, and remember that they'll go away if I just eat something.

The only sweet thing I eat is the Halo Top, of which the chocolate chip cookie dough is my favorite. I made a deal with my grocery store where if I buy a case (8 units...enough for two weeks or so) it costs less than $4 a pint. It's kind of pricey otherwise.

Has anyone had their bloodwork done since starting this diet? The pruported health effects are as much as a motivator to me as the weight loss. I really hope my cholesterol/triglycerides/etc. aren't going through the roof. I'm going to make an appointment in the next month or so to get a blood panel done.
I go in for bloodwork on 7/10.  Last time I did this, my numbers were eventually quite good.

Word of caution, though.  What will likely happen is that your LDL and trigs will certainly be elevated while on keto and actively losing weight.  This is normal/expected but should level off as you reach and maintain your goal weight.  LDL may stay slightly elevated based on AHA guidelines, but it's important to recognize what type of LDL you have... particle count is far less important than particle size/type.

Am I the only one that has tried mashed cauliflower and cauliflower rice and hated it? If I want cauliflower I end up baking it with some olive oil and seasoning.

No! I don't really like cauliflower much to begin with, but ricing or mushing it up makes me like it less. I'd rather just eat whatever it's supposed to be served with and skip it. I like it best baked/roasted too.

And lifting on the off days.  I tend to keep my carbs to a minimun but i have that stubborn last 20 lbs to lose and am wondering if i should try this. I did this a few years ago with success but am hesitant to this time cause' i do a lot more cardio now than i used to.

I have been walking or exercising at least an hour/day 6x/week. I did 2 soccer games on Saturday and a 4 mile walk with no processed carbs. I did eat a killer salad and a bag of broccoli covered in cheese and pepperoni.

It doesn't seem to affect my husband at all, he lifts and rides our stationary bike. I ride the bike a couple times as well and I don't feel drained.

Did this last night -  Grilled New York steaks with a basic olive oil, Italian seasoning on it. Finished with a Balsamic drizzle.   Grilled Asparagus as well with basic olive oil and did garlic salt (will go back to just using garlic powder next time)

Then also did up some riced cauliflower - In a high sided pan, medium heat I melted about 2 TBSP of butter and added the whole bag of cauliflower rice (bag from Costco) I mixed that together, covered it and let it cook for about 5 minutes. I then added some bacon crumbles (again, had the bag from Costco), added say 1/4 cup plus some of bacon and stirred and covered so the bacon could heat up. Gave that about 3 minutes or so. Then I covered generously with grated cheddar cheese, covered the pan to let that melt. This was very good. My wife liked it and my 10 year old went back for seconds. Have been told that this will have to be added to the rotation as a side dish.

I'm with you. I don't want to make cauliflower that looks or tastes like rice or potatoes. If I want rice, I'll eat rice. If I want cauliflower, I'll eat cauliflower. No need to make one impersonate the other. I feel the same way about "cauliflower rice" as I do about tofurkey, facon, chik'n nuggets, and non-dairy cheez. They're fakers, all of them.

 
Career training deal next Tuesday.  Manager thinks he is being "cool" by having a "game afternoon" (cornhole each other; volleyball; etc.) catered after the training with this menu: Smoked Salmon on Cream Cheese, Watermelon Feta Mint Salad, BBQ Brisket mini Sandwiches, Chicken & Waffle Bites, Thai Crab Cakes, Fruit Tartlets, Chocolate covered Strawberries and Pound Cake with Strawberry Compote.  

I could do that first one.  The rest of it will (continue to) kill me.  So, what do I do?  Go, and take a Jimmy John's lettuce wrap?  This is my first choice.  Skip it all, and make my manager think I hate him?  Go, and fast?  What would you do?

Agree to some extent. 1/2 cup of watermelon is like 25 calories or about 6 grams of carbs. One crab cake will have some breadcrumbs.    Eat the crabby parts.   

I think you can participate in the event and make decent choices.  You can load up on string cheese before hand and have some almonds ready as backup.

I just think I gotta go alternative.  I'm not strong enough to eat the spread and stay disciplined.  JJ's it is.
