I'm not supercomfy with the datadominator here but I think you can select criteria to have it generate these stats as you like

 
I think 100 yds Rec is for sure the toughest. It is the 1 of the 3 that is most predicated on cercumstnace. The WR needs to have a QB willing and able to get him the ball. I would say that RB rushign for 100 is the easiest, but there is not much seperation between any of them.

5 200+ yard rushing games

3 200+ yard receiving games

1 400+ yard passing game (Marc Bulger, wk 4 vs. NYG)

138 100+ yard rushing games

166 100+ yard receiving games

64 300+ yard passing games

 
Obviously there are fewer QBs, hence fewer opportunities for them to throw 300+ yards. If we extrapolate that there are (usually) two WRs for every 1 QB and RB, pretty clear that RB rushing 100 yards is easiest, and WR recieving 100 yards and QB passing 300 yards is about the same.

In 2004 there were

81 300+ yard passing games

179 100 yard+ rushing games

168 100+ yard receiveing games by a wr, 19 bya te or rb

Just to add on some 2004 data here...13 400+ yard passing games

2 200+ yard rushing games (James vs. Chicago, Rudi Johnson vs. Cleveland)

3 200+ yard receiving games (Drew Bennett vs. KC, Rod Smith vs. Atl, Javon Walker vs. Ind)
