I just boil with a teaspoon of salt, drain the water and fill it back up with cold water a couple of times or until the water stays cold. They peel with no problem after

Fresher eggs are better even if they're harder to peel.

Chit, I hold a chicken above the boiling water waiting for it to plop out. Those are the best.
