Which three running backs should I start this week, assuming that Melvin Gordon is out I am leaning towards starting Jackson, Ware and Johnson leaving Fournette and MAck on the bench.

I would start DJ, Fournette and Jackson (if gordo is out) otherwise Ware

I think you must play DJ and Fournette no matter what.  After that it looks like both Gordon and Ekeler will be out so in that case I roll with Justin Jackson in the third spot.
