sandwiches - let's help each other fix lunch (1 Viewer)

That avocado chicken salad looks awesome. Gonna have to try that.

All this mayo talk makes me want to hurl. Seems like any time someone can't figure out how to finish a sandwich they just ruin it by throwing mayo on it.

Was in a rush for lunch the other day so I had to grab something from the local Fresh Market. Went with an Italian wrap. (Ham, salami, provolone, etc). Figured that would be safe.Sure enough, some genius made the decision to put ####### mayo on it. 

Other than a small amount when I make tuna, I never touch the stuff. Saw someone order a salami sandwich with "extra mayo" at the deli the other day and nearly threw my breakfast up on the counter

Yesterday:

Leftover grilled chicken breast - shredded with a fork (is better than cutting with a knife. The fibers hold the sauce better)

on a large burrito wrap with Franks Hot Sauce, blue cheese salad dressing, and lettuce.

Today:

Leftover grilled cheeseburger patty - broken up and put on a large burrito wrap with shredded taco cheese, pickles, and MAYO!

 Microwave for 20 seconds and enjoy.

Figure that for what I pay for my ingredients, handful of potato chips, granola bar, and an apple / orange / nectarine / banana.... in a 5 day work week, I'm about $30-$50 richer than if I was buying lunch @ $10 / $12 / $15 like some do.

$1500 a year (50 weeks)  ... and I eat like a king.

 
I remembered "Dave's Killer Bread" being mentioned.  I saw some at the supermarket last weekend, so picked it up (went with the Good Seed variety).  That is some good bread.

 
The avocado chicken salad turned out great.  Only problem I had was I used two jalapeno peppers which was great for me but not so much for my wife.  Next time I will stick to the 1/2 jalapeno.

 
1) Boar's Head Roast Beef, Provolone and roasted red peppers on a soft hoagie roll.

2) Rumanian Pastrami with dijon mustard, vermont cheddar cheese, tomatoes and onions grilled on pumpernickel.

To each his own, but a leftover cheeseburger in a tortilla doesn't exactly scream royalty

 
Went home for lunch today and put a fried egg and some bacon between two eggo waffles for a homemade breakfast sandwich.  The maple syrup between the eggos was a great touch.

My Costco carries 2-packs of it for just a bit more than a single loaf at most grocery stores.  My favorite bread.
