I like Vika Goes Wild. I've subscribed to her YouTube channel for quite a while, and I've gotten a few of her arrangements as sheet music, though I've never learned a full song before giving up. She sells them through her site.
If you like Vika, you may also like Scott Davis, who has similar musical tastes. His arrangements are quite a bit easier to play (they are playable by me while Vika's are not), though they sound quite good. Here's
"Sweet Child O' Mine." He also sells his arrangements through his site.
Also check out Mercuzio. Most of his arrangements are insanely difficult, even more difficult than Vika's, and really beautiful. I've never been able to learn a full song transcribed by him (other than "Imagine" which doesn't count).
He has different tastes -- a lot of movie themes -- but here's some Metallica. All of his transcriptions are available for free.
Kyle Landry is also quite good. He has different tastes as well -- lots of music from video games, and lots of Disney.
Here's his version of Leonard Cohen's "Hallelujah". Not all his arrangements are available as sheet music, but the stuff that has been transcribed is available for free on his site.
My favorite in this category of YouTube arrangers is Greg Skalak. His arrangements are quite a bit easier than those of the others I've listed here, but they still sound really good.
"Wonderwall" is a good example. I learned it fairly quickly, but it's a lot of fun to play.
"Californication" is another good example. He also sells arrangements through his site, though he's transcribed only a small percentage of the songs he's posted on YouTube.
