I'm having a hard time deciding on which players to keep. It's a standard, 12 team, IDP league with 3 keepers and no draft pick compensation for any of the keepers

Rosters are very deep with the starters being 1 QB, 2RBs, 2WRs, 1TE, 1WR/TE, 1K, 2DBs, 2LBs, 2DLs, along with 6 bench players and 1 IR.

My potential keepers include:

Evans, Cooper, Cooks, Fuller, Robinson, Collins, McCaffrey

I also have the 1st overall pick this year (non-snake draft so 1st pick in each round) so I'll be able to take Barkley 1st.

As for the keepers, I'm leaning toward Evans, Collins and one of Cooper or Cooks. OR, maybe just go with Evans, Cooper and Cooks, take Barkley 1st and likely get a guy like Collins in the 2nd.

What would you guys do?

 
Based on your potential freeze candidates I would guess that the IDP side is not very important or doesn't have nearly the same value as the offensive players.  That is a shame because it really limits options in a league like this. 

That being said Evans is a no doubt keeper of the group so that leaves two more of those listed.  I would probably list them in this order:

  1. McCaffrey - even though it's not a PPR I expect him to be on the field a lot and get quite a few touches.  Another year of experience and he should be a solid Rb2 or better for fantasy purposes.  I like his ceiling much more than Collins
  2. Cooks - I don't trust Cooper and am not a fan.  I like Cooks for the Rams in that offense.  Still boom/bust but I like the potential.
  3. A-Robinson - Has the skills and a new creative OC.  Should be solid.
  4. Cooper - Will still get targeted and is the de-facto #1 in Oakland
  5. Collins - Nice RB2 to have but doesn't have the upside of McCaffrey
  6. Fuller - TD rate isn't sustainable.  A nice WR3/4 but you have better options here.
 
You have a lot of good keepers.

I would offer some out for draft picks, if that is allowed in your league. Depending on what people bite on, that may help you decide. Or perhaps, you can package a couple for an even better keeper. 

Short of that I would eliminate Fuller (don't keep a WR2 that is that TD dependent), Robinson (new offense, young QB, and coming back from injury), and Cooks (just have hit rated lower than the rest).

That would leave: Evans, McCaffery, Collins, and Cooper.

Positionally, considering your pick, it would make sense to keep Evans, Cooper and McCaffery or Collins. (Knock McCaffery down a notch because it isn't PPR and he will be competing with his QB and CJ Anderson for TDs)

General rankings say go with McCaffery here but I really do like Collins quite a lot.  Baltimore loves to run. so I'd go Evans, Cooper and Collins.

Regarding defensive players, the point system is very simple and therefore only the LBs are worth considering of which I do have Luke Keuchly. End of season point totals were:

Cooper - 110.4 (missed 2 games)

Cooks - 156.2

Collins - 146

McCaffrey - 147.6

Keuchly - 119.5 (missed 1 game)

So I suppose a case could be made for some of the defensive guys to be keepers (Bobby Wagner finished with 132.5 points) but none of the guys in our league ever draft a defensive player before our 4th or 5th round every year.

 
One more question...

So I'm likely leaning towards keeping Evans, Cooper and Collins and with the 1st pick I'll draft Saquon. We can only start 2 RBs so Saquon and Collins seems like a pretty good place to start.

That said, I was just offered to trade my 2nd rounder this year AND next year for Dalvin Cook. Starting Saquon and Cook each week seems pretty tempting but but on the other hand, both those 2nds seems like a bit too much to give up for Cook.

I'd essentially be giving up 2 2nds and Collins (would have to drop him) for Cook and wouldn't have a 2nd round pick add to my WRs (can start up to 3 WRs each week) like I've been planning to do.

Is this trade worth it or is it too much to give up?

 
So I kept Evans, Collins and McCaffrey and am going to select Barkley 1st overall... That said, with the first pick in the 2nd round, how would you rank these WRs assuming all of them are still available...

Cooks, Cooper, Robinson, Marvin Jones, Golden Tate, Corey Davis

I think you made the correct choice. I was just about to post those three names. I think Evans was a no doubt choice even with Winston out for 4 weeks. McCaffey is a solid rusher and pass catcher and will get you a ton of points because he will be on the field for all 3 downs. I also am a Ravens fan and feel Collins is in for a breakout season. With  Barkley you are set at RB. I would rate the WR's as Cooper, Robinson, C. Davis, Cooks, Tate, M. Jones.
