Hit up both Franklin and Terry Black’s in Austin this past weekend. Both were excellent and well worth the time.

Didn’t get in line at Franklin’s until 11:45am on Sunday. Only one order/checkout counter makes the line take longer than you think it would. Made it through the line to order at about 1pm and they still had brisket, pork ribs, and jalepeno cheddar sausages. All were excellent, but the brisket was elite. Love me some brisket.

Terry Black’s ordering process is a well oiled machine in comparison. Same length line took about 20 minutes to get through. Separate counters to order sides, beverages, and (3x?) meat slicing/checkouts was awesome. Had a similar spread of food here, and actually liked their jalepeno cheddar sausage a bit better. Amazing.

Wish there was something comparable in Minnesota. 🫩

Will be in DFW in September, so let me know if anyone has recommendations there.
There is a Terry Blacks in Dallas. They’re always showing it on the prime time broadcasts for NFL games.

I really enjoyed it in Austin. Didn’t prioritize getting anywhere else. Interstellar is where I want to try on my next visit.

DFW - Pecan Lodge in Dallas or Goldee's in Ft. Worth.

So many recommendations...Great BBQ here. I'll give my personal thoughts on a few:

The actual best:
  • Goldee's (which is really over in Ft Worth) is Texas Monthly's favorite right now, just made Michelin Guide
  • Cattleack (Addison, which is like 15-20 minutes north of downtown Dallas) is my personal vote for the absolute best. But it's only open for We/Th/Fr lunch and the 1st Saturday of the month. Absolutely phenomenal, been going a couple times/year with friends since like 2015. They just made the Michelin Guide at the same level as Goldee's

The favorites and obtainable best without going to a lot of trouble:
  • Deep Ellum: Pecan Lodge - I think is solid but now a bit overrated. It's good. It's a bit pricy. There is better...including Terry Blacks' which is like a sub-5-minute walk away. Which I also think is fine but a bit overrated. Best part of these is the proximity to Trinity Cider, my favorite brewery (cidery) - but if I'm here, I'd rather have Revolver tacos or Oni Ramen.
  • Oak'd - on Greenville Ave, kind of away from going out and other restaurant-y areas, but damn it's good. This is my hidden but established BBQ rec for people from here already as they probably haven't been and it's darn good
  • Lockhart's in Bishop Arts is also outstanding and probably the best spot to spend a day/morning/evening. Very walkable, great couple wine bars nearby, an Emporium pies right there...yum. Yum. Yum. (3 yums, seriously).

Feel free to DM for more than just BBQ, or to follow up in thread on anything else too. My wife and I care a lot about food and have been here a while now.

On a recent trip to Dallas for a Continuing Ed course, I had the pleasure to try both Terry Black's and Pecan Lodge. Ended up having the beef ribs at TB's, which were amazing. The sides were very good as well. Pecan Lodge's burnt ends were fantastic, but their sides were nowhere near as good as TB's. Who knows, I may have hit a bad day at PL. I'll hit Oni Ramen next time I'm in town....love a good ramen joint even in the Texas heat!

It's funny in that some of the OG Texas places seem like they intentionally don't put effort into the sides. Like it's some sort of disrespect to give honor to anything but the meat.

I remember the first time I was at Franklins and was surprised at how average to below average the sides are.

Truth in Houston is one that CRUSHES their sides. A lot of the newer ones do as well. Burnt Bean in Seguine puts a ton of effort into the sides.

I think some have even swung the other way now. For instance, Fege's in Houston is average BBQ IMO but they still get a lot of love. Their sides however are fantastic and unique. I had my favorite ever Chana Masala there.

I'm a sucker for a good side. TB's corn pudding (or whatever they call it there) was amazing and the pinto beans were a revelation to a guy who's been used to sweet "baked beans" all his life!

"The heavyweight champion of diners’ affections in Oklahoma is a good steak, and nobody has done it longer than Cattlemen’s. Born as Cattlemen’s Café in Oklahoma City’s infancy and won in a dice game after World War II, the institution evolved into Cattlemen’s Steakhouse in 1990. Owner **** Stubbs broadened the menu to include prime beef to go along with choice cuts, creating dishes that draw droves from around the world. The restaurant serves its hearty steaks at breakfast, lunch and dinner. The steak earns Cattlemen’s a lot of attention, but the restaurant is almost as popular for its lamb fries and salad dressing."

I ate here years ago on a friend's recommendation. Great steak. Very cool modern city outside and walked into an old timey place vibe.

For those in Central Texas - saw this article in the Austin-American Statesman last weekend -

Louisiana-Inspired Parish Barbecue is Austin's Best New Barbecue Joint.

Decided to try it on Friday. It was fantastic.

Unfortunately they were out of their smoked ham - which looks amazing on yelp. But we tried -

  • Brisket - terrific
  • Turkey - very good
  • Pork ribs - Excellent
  • Sausage - the star of the show. I have always thought that Luling City Market had the best sausage I've ever had. This is the closest rival I've seen.
Can't wait to go back for the ham.

Nice. I'll have to try that one. The explosion of new and awesome BBQ in Texas the last few years has been fun to watch.

With Valentinas falling off, my go to in Austin proper is still La Barbecue. Was there a few months ago and it was as great as ever.

My true go to in the area though is taking a drive to Taylor. Louie Mueller's https://www.louiemuellerbarbecue.com/ is where I fell in love with BBQ. It's a shrine. And owner Wayne Mueller (Louie's grandson) is a long time friend and even longer time Footballguys subscriber.

Still the king of the beef ribs.

His hours seem to be reduced. Not sure if it's permanent or temporary but I drove by there a couple weeks ago and a sign said now only open Weds-Sat.

Not sure. I do know it seems some of these are realizing you can do as much business in a few days as you can every day. Snows, as you know, just does Saturday but I'm starting to see this more. John G's is one of the best in North Carolina and they do that. If I ever did a BBQ place, I think I'd go just Saturday.

Sorry if this is a repeat of anyone in the thread, but the best BBQ in New Orleans is at Walker's - The Cochon du Lait Po Boy is a "you have to have it at least once in your life" kind of thing. The good news is that if you come down for JazzFest, you can get one at the Fairgrounds, otherwise you have to drive out to New Orleans East. Blue Oak, Central City, and Cochon King are all pretty good in town, LA 23 is outstanding on the west bank, and Smoked is superb out in Harahan (we get their smoked turkey every Thanksgiving). Still miss McClure's SIGH

How's the cheerwine sausage links at John G's? Love a good smoked sausage link. I've been meaning to make it down there one of these days...

They're great. But honestly, the Cheerwine thing is more a nod to the local (and deserved) cult status for Cheerwine. It's basically to the Carolinas what Big Red is to Texas.

Fun but so sugary it's tough to drink.

The sausage is good but not crazy.

Ate at Lexington BBQ in Lexington NC last weekend and it was fantastic. The chopped (pork) BBQ was amazing as was the red slaw. I loved the fact that the vinegar-based sauce was made in a coffee carafe and delivered in a paper cup. Any future trip to charlotte will require a stop here.

Stopped by 12 Bones in Asheville last weekend. Was kind of confused that the price tag on the ribs was $36 and the pulled pork was $15. Maybe rib prices have gone up, but I was expecting upper 20's

Full rack for $36?

Sandwich or pulled pork plate for $15. That seems about right.

BBQ is by far the worst profitable food I can imagine. Those ribs should cost $75 to put them on the same profit margin as the Pizza restuarant in town.

Yes, full rack. As an expert, can you explain why a full rack of of ribs is 2.5x a pulled pork plate or almost 2x for a half rack. Just looked at menu that had a 3 meat option for $25 for chicken, pulled pork, and brisket and allowed you to substitute a half rack of ribs for an $11 up charge. Based on retail prices I'm not understanding other than playing on the fact that ribs taste better than chicken.

I think it's just food costs.

Ribs are expensive.

Food cost and area taken up per item in the smoker. A 10lb pork shoulder and a rack of ribs take up roughly the same amount of space on the smoker. I'm seeing $15+ per rack of baby backs (uncooked) here in central NC, where pork is plentiful.

Thanks. I generally see baby backs around $7-$9 a rack so that was probably biasing me. I thought I heard/read years ago that the wholesale meat mafia hits these guys pretty hard for ribs.

Tried a different place Friday- it's just called Cowboy. Outside of our normal radius, but kids extra curriculars will take us nearby with greater frequency for the foreseeable future. And they have a smoked prime rib special every Friday.

We will be back.
