I agree with all of this. I am a big time chicken lover but if I had to choose 1, I need to go with the variety of pork.I love chicken as much as anyone, but it just can't compete with the variety of different cuts of beef or pork.
I think I would have to go with pork. I could happily subsist on pulled pork, ribs, pork chops, pork tenderloin, pork belly, and bacon.

it was nice that god gave pigs some spare ribs so we could eat them.

It's an enormous lie that chicken is healthy. 99% of the chicken raised in the U.S. is done so on factory farms. The animals live in their own feces in cramped conditions that necessitates them to be injected with a disturbing witch's brew of drugs just to keep them alive - drugs & hormones that make their way into your body. In addition, the processing involves them being bathed in a hot water tank that's full of feces and disease so they soak up the "water" to make the meat look fatter. In other words, a good 30% of the meat you're eating is really feces and e coli water absorbed into the real meat.Pork tenderloin is just as healthy as boneless skinless chicken breast, and I think you have more options with pork. That knocks chicken out for me.
Beef tenderloin is nearly as healthy, but again, I think pork gives you just a few more options, but not much. And I think I wouldn't last long with just red meat. After a week, I'd be looking for a turkey sandwich.
