Most teams have more than one good QB, how come you don't see more 2-QB sets? It seems to me that if you had two guys who could throw the ball downfield, the opposing defense wouldn't know where to focus their pass rush. Additionally, you could have one athletic QB who'd be a running threat as well, giving your offense even another dimension.

Are NFL teams too conservative to try this? :shrug:

They could run a double option there.
