"fake" white meat chicken? (1 Viewer)

An Indian restaurant near my office has white meat chicken that seems fake, for lack of a better term. The chunks seem to have a fairly uniform thickness, and they flake apart as if layers of mechanically separated chicken were sprayed on top of each other. Kind of like how fast food chicken tenders used to be made out of a single piece of chicken but you can tell that most of them aren't any more, but taken to the next level. I imagine them back in the kitchen cutting up this massive slab of "chicken breast" like a huge tray of brownies. Does such a food service product exist?

Think about fast food a minute.

McDs, Wendy's they all have different levels. There is some $1 chix sand that I promis is not real chix and then you also have a premium chix sand at most for about $5 and they are at least edible.

It makes you wonder what grade meat they use on the cheapies.

Could be how they cut the chicken breast - cut it perpendicular to the grain, cube it into uniform chunks and cook it to death and it comes apart like tiny shingles.
