lobster tail question (1 Viewer)

Cranston Lobster is the best. Seriously.
Never heard of it. Do you have to go to a specialty fish market for it usually? Its not marked that way in any of our stores.
I think Rhode Island lobster is better than Maine, but I get it straight off the boat. It's usually softer down here but that just may be because of the seasons and other factors. Since everything is slightly better (at least) in Cranston, Cranston Lobster is #1. As someone who buys and eats Lobsters by the dozen, I would concede that it could be argued that Alaskan King CRAB legs are better (and sweeter) then any Lobster.

 
Rhode Island lobster is Maine Lobster. Of course it is a bit better when it is fresh caught. And King Crab rules, followed by Maine Lobster, followed by Scallops.

Perhaps this is my disconnect with everyone in this thread, not sure, but to me the spiny lobster is less mushy, sweeter and has almost a natural buttery taste to it.

Perhaps this is my disconnect with everyone in this thread, not sure, but to me the spiny lobster is less mushy, sweeter and has almost a natural buttery taste to it.
I grew up near Boston, on the water, therefore anytime we got 'spiny' or 'rock' lobster, it was frozen. To me that brings down the quality of the seafood tremendously, so I rarely, if ever go for those kinds. I usually will only do lobster at home in the summer, when it is at it's best.

Blue crabs are even more flavorful--but take a whole lot more work! I would also suggest that Maine lobster caught in N.C. is richer than other areas because they scavenge from a richer and more varied food source. The best I've ever had were spiny lobsters from Key West but it's not really fair to compare since we were diving for our own, fresh.

I've never seen packaged spiny lobster packaged correctly, so I can understand this. We catch them, then are eating them 2-3 hours later. They rarely see a freezer and if they do, we put the tails in large gallon freezer bags, fill them with water and freeze them. This way they don't turn to mush.

 
Our geneticists need to get to work crossing lobsters and skinks. We need lobsters which can shed their tail, caudal autotomy, and grow new ones. catch a lobster, take its tail, and toss it back to grow another.
Don't they do this with crabs? Catch them, break off their big claw, and toss em back into the water.

I've heard Maine lobster described many ways...... Mushy is not one of them.

Your sampling of Maine lobster was tainted... I can now see why you're the only person the thread who things rock lobster is superior.

I've heard Maine lobster described many ways...... Mushy is not one of them.

I've never had it not in a restaurant, so that can certainly be part of my experience. Regardless of where I've had it though it seemed closer in consistency to a light white fish...almost flaky

 
I think with seafood it's safe to say that anything fresh caught is going to destroy anything frozen. That much is very clear.

I generally don't order Maine Lobster out because many places in this part of the country have no idea how to properly cook it... even if it's freshly cooked.
