MEMPHIS BBQFest > 2023 > 1 Month Away - $100,000 budget due to inflation! (1 Viewer)

Dont let Tipsy help. He has one job, to cook his food. Let the plebes take care of the grunt work
I tried to tell him that.

Now we're hearing no power till at least 1pm today. Apparently Memphis in May was unaware that teams coming in Sat and Sunday to load in might actually need to REFRIGERATE some of this hundreds of thousands of pounds of meat we're going to be cooking

Unreal...

Unreal...
Unreal is right! What a cluster. Maybe the (Dis)organizers thought it was "Memphis in June" this year and are scrambling due to a late memo?

I'm predicting a Trophy baby!

Now we've got city code enforcement coming down on us over the structure (to be fair... it IS a bit ridiculous). Extra $500 later for "Fees" and stamped engineering drawings validating that this bohemoth was indeed designed and constructed by professionals , we're in the clear. (Truth be told, the basic structural layout was designed by my buddy (head of the scaffold company) and I over my kitchen island while putting down an 18 pack... but that's neither here nor there  )

They're also limiting our capacity upstairs and on the middle floor based on staircase access. Nothing too bad, but it's another hiccup in the process. Essentially we're convinced that there are a couple teams stirring the pot and trying to make our lives difficult by calling in all sorts of harassment.

That said... booth flooring is finally done and carpeted. Electrical lines are being run to refrigeration and for light and sound (delivered tomm). Our previous 40-50 case hookup with redbull has dried up to 10 cases due to my boy leaving town, but it's better than nothing.

Poor neil's still not bought an ounce of food as he's been down there working all day. I'm trying to help coordinate manpower somewhat from work but we're slammed here. We've had a few great volunteers who are aware we're running into speed bumps and are coming down working hard despite not even being on the team. That kinda stuff is awesome.

Still hoping to make dinner work with the team and Chef Troy Black at Memphis BBQ company tonight... will be nice to get everyone together and relax a bit before the final push tomorrow.

Poor neil showed up at my house at 6pm last night exhausted with a bag full of gus' fried chicken. He, the GF and I snacked and chatted and then the poor guy passed out on my couch. I imagine tonight will be more of the same with an early night. He'll be doing all the food shopping tomorrow I suppose.

Crunch time... it will all be worth it once we're locked and loaded :banned:

My status for BBQ fest this year has been downgraded to doubtful, so chances are I'm not gonna be able to partake in the festivities. Stinks because icon's always been hospitable the past few years, & I was looking forward to Tipsy's offerings, as well as meeting some of y'all.

Icon, I've got a feeler out for one of your kegs, but my group usually buys beer by the case, so I don't know if it'll work out or not. I was actually wanting to give the nighttime ale a shot, but agree that the lighter stuff is better suited for eating/all day drinking. And don't sweat the power/code issues - this time tomorrow you'll be soaking up pure awesomeness. MIM will have their #### worked out by then (this thing's waaaay too big for them to screw it up!)

IMO, Thursday is usually as good as Friday to take this whole thing in if anyone's having to decide between days/nights to come down. Thursday is usually the kick-off party and pretty fun, while Friday is full-on "go get it" craziness.

Have a blast folks - I'll be living vicariously.

Heading down to the river for dinner to get work done and skipping dinner with Troy Black. It happens. Tipsy wants to cook and we have #### to do. I'll post up more pics on the twitter feed once I get down there.

Tipsy did burgers (tasty) and we fought all the BS charges / accusations.... End result?

- sponsor banners stay up despite complaint

- booth capacity stays up as enginneering drawings passed w flying colors

#### em... This party goes on!

Lights and some decor hung.

Refrigeration in place and running great.

Insane light and sound system going in at 9am

Kegs hitting the booth at the same time

Meat being delivered tomm am.

Our sponsor ship from them provides all our ribs free and our pork shoulder at 1.79/lb instead of 2.79/lb like everyone else at the park

Tomm AM tipsy is doing all the grocery shopping. Gave him the team Visa. I'll be down there around 12:30 to load in our last stuff, check into the hotel... Then get the party going!

Brisket, shoulder and some other stuff tomm night I think... Don't recall menu :banned:

I'm all with you on the 'F U' to all the other teams #####ing. But, please make sure you stick to the capacity limits on that thing. That bohemoth, while I'm sure it's sturdy, would make me nervous as hell. No way I'd be underneath it.

Oh we will. Last thing we want is fire marshall shutting us down. The city has limited us to about 100 people up top and 30ish people on the 2nd level due to staircase capacity. We are clear to pack em in on the bottom deck.

The booth itself is weight rated by the engineer to 400 people top deck, 150 2nd deck, and 500 people bottom deck. We will never be anywhere NEAR capacity on this thing.

Raining pretty good here. Supposed to blow through by 4-5pm and be gone for the balance of the festival. Fingers crossed!

I've been going to BBQ fest for 35 years - my dad's team cooked for 15 years starting when I was about 9 - I've never seen a "booth" that big! That's awesome.

Weather sucks today, but looks like the rest of the weekend will be perfect - I mean if you like 70 and sunny in Menphis, in May!

Y'all are set up for an amazing weekend for sure

Text me if you wanna come down with the lady/buddy, GB!

This looks like such an awesome time.
Standing invite, GB!

Sounds like you need to line up a sponsor for generators next year.
Two Sunbelt Rentals in the Memphis area including a Pump & Power location that would power up that whole ####### shindig if they wanted. Shameless plug
  No need for generators. They run a ton of 110V and 220V through that park for this. I think generators might even be outlawed after load-in and set up. The noise/hassle just isn't worth it for something like this. Fuel costs would prob cut into any real savings. We paid $750 for our juice... got almost double what we paid for so it all worked out.

Another Anecdote:

Not counting the 350-400 wristbands that were given out, the guestlist is approaching 1000 people currently... includes several prominent members of the local media.

 totally understand. I'll be under the thing all week long too and I'm not too eager to die myself

Thanks and fingers crossed... It's not easy to pull hardware at this competition but it would be nice to get a call or walk in something!

Ahhhh BBQfest hiccups... how do I love thee...

The Rain Situation :

Sooo... the scaffold decking and carpet is doing a horrible job of holding back the rain. We're now scrambling to line the top deck with plastic sheeting. to cover it. Rain should let up by 3 or 4 at the latest. Friends/family night tonight so we have 50-60 guests coming down for 6pm dinner. We will scamper to shop vac the carpet and get up as much moisture as possible from the carpet, and clean up the mess.

The Light and Sound system:
GOOD NEWS: We've been told It's $50,000 worth of light/sound equipment :o

BAD NEWS: The truck broke down at the warehouse. They have rental trucks coming, transferring it, resending down. So light/sound install is delayed.... which is fine since it's pouring and leaking through the booth anyway

Like I said earlier... wouldn't be BBQfest if there weren't 10-20 crazy obstacles that popped up.

GOOD NEWS: Weather should excellent once this crap blows through this afternoon  Just sucks starting out with a soggy booth

Oh I want to for sure! I will if I can make it happen, thanks a lot

Absolutely torrential downpour making life hell down at the park now. We are talking monsoon-style flash flooding turning streets into rivers type downpours....

Our light/sound group just delayed install because it's too much... the booth soaked... Ugh. Problem is, park won't let any other vehicles into the park after 3pm. The light/sound setup fills a ryder van. This rain isn't due to let up until sometime between 2 and 5..... potential huge headache....

Watching the rain drop steadily out in Germantown right now, looks like it's lightening up.

Two weeks ago, MIM Musicfest had perfect weather all weekend. You knew something had to give, right?

Memphis In Mud! At least we know to expect it at some point, right? Just think of it as a "dust dampener" from all the load ins... Weather looks good from tonight on.

Yikes! We are in Little Rock and have gotten a lot over the last several days - but nothing like that! Weather still looking good from here on out. Would love to be there in the nice weather with you all - maybe next year!

What's the hashing to follow? I'm trying to find it but there's too many posts to sort through

ETA: Found it. @mccbbq

Fox News was in our booth within 1hr of opening today filming neil... I was asked to be in camera to talk about all the scaffold uproar. I politely deferred to our scaffold guy who, little be knownst to me, had killed a handle of Milagro anejo with the team next door. Neil sounded great.. My boy Matt was a little blinded by the light.

Good times. This light and sound system is insane.... We can drown out roughly25pct of the park if we get above 5-6. Yes... A mile long park.

Official Panamanian team is behind us. They ####### love Neil. Came by with beef around dinner. Not bad. Came by at 10 wanting us to try their ribs. Great flavor, well cooked. But horrible tr and presentation. We talked a bit and agreed to help em out tomm.

Oh yah and an entire Asian nail salon crew of 7 single 20somethings rolling in around 7pm...

JTG/sbonomo/etc... Activate!

Tipsy off to a good start this AM with a dead battery at my place back in east Memphis. :( . Team scrambling to get someone out there to help him out.

Looks like lunch pork tacos is gonna be purchased pork lol

If at any point you could post some information on his brisket...pics, basic info without giving too much away, like smoking temp, type of wood used, basic style of rubs/sauces/techniques used...I'm on a quest for the perfect smoked brisket for my Egg. After a few attempts I'm definitely on to something here, but I want my guests to get that look in their eyes like they're about to get emotional and need a minute to compose themselves.

IMO, a perfectly seasoned, tender and juicy brisket is the ultimate test of a BBQ master. For weekend warriors like myself, it's a lifelong quest.

Tipsys brisket is the best I have ever had. wife agreed

I can officially say that the McClures BBQ booth is quitethe impressive sit! It also helps that you can see it from about a mile away.
