I would not toll the statute of limitations.

Do get the complaint to your insurance agency ASAP after you are served. Do follow up with Insurance Agency to make sure the complaint has been forwarded to an attorney. Do make sure Attorney is handling the case, and files an Answer, or gets an extension, within 30 days of being served (guessing on the time frame for filing an Answer here).

Personal injury lawyers are all about quick and easy. When they take on a case, they want to know two things: How easy is it to establish liability, and how easy is it to collect a judgement. PI attorneys get paid from the proceeds - so if you can't pay, they don't get paid. That makes insurance very important. They are currently negotiating with the insurance company for a pre-suit settlement - they are probably close, hence asking for an extension to finish the negotiations. Based just on teh facts that you have described - rear-end collision with no (obvious) serious injury - this is not a case where you need to start hiding money. Assuming you have normal insurance limits - that is what the plaintiff's attorney is after - its quick and easy.
