Tourist stuff:
Empire State Building - Definitely worth it, and you are staying nearby. Can see the entire city from up there. FYI, it's open at night/late - though it may be too cold to enjoy it much at that hour.
Statue of Liberty - Not sure the details, but hard to get tix as I recall.
Times Square for New Year's Eve - You sure about this? Ill ask my friend (NYPD) but you have to stand for hours, no bathrooms, no drink allowed, standing in one place. That said, if everyone is up for it, I'm sure that the experience is like none other (but I'd want no part of it)
Shopping - 5th Ave. and Macy's - Depending on what you / your wife & daughters want, some areas in soho are great for a combo of some name stores and local boutiques. Bloomingdales down there too, although the big bloomies is on 58th and lex (57th has a bunch of high end places)
Central Park - You can actually do 57th shopping and/or Bloomingdales up that way and then the park, which is close by.
Eating:
Nathan's - You arent suggesting going to coney island, are you? A LONG subway ride and not much going on this time of year.
Katz's - Definitely. Cool neighborhood, I believe you are close to the tenemant museum, which I'd highly recommend.
Carnegie Deli - Not sure you need two deli's, but they are a very different experience. The size of the sammiches alone here make it worth a trip. Have many fond memories of when I was much youger, but for a good, quick, not too expensive bite, I'll now head down to Katz
Steakhouse - I've done Peter Luger's, Keen's, and The Palm. I am thinking about Peter Luger's because that was my favorite, but other suggestions are welcomed. Assuming the fam likes steak, good thing about luger is the location. Can check out some BK.
Our hotel is near the Empire State Building, but we are not afraid of walking and cabbing. - You are also close to a ton of subways, which is part of the NYC experience.
As I mentioned, the tenement museum is really cool, and I think your kids would be old enough to appreciate it - they also have walking tours and even food tours. Can do Katz, tenement and some boutique shopping in soho / LES in a nice walk. Also not far from the Village... which you need to check out.
Any appetite for museums? You really have some of (and in some cases the) best in the world. From Museum of Art, MOMO, Natural History.
Also, while I've never done it, I've heard that taking the Staten Island Ferry gets you as good a view of Liberty as anything, and a nice little boat excursion.

20 something people like to go out and drink and have fun...seems pretty harmless...
